Corn Recipes


1.Sauteed Cottage Cheese, Capsicum And Corn:

Ingredients:
3 capsicums(thinly sliced), 1 1/2 cups cottage cheese(cubed), 1 cup sweet corn kernels, 1 tsp cumin seeds, 1/4 tsp asafoetida, 1 tsp green chillies(chopped), 1 1/2 tsp grated ginger, a pinch of sugar, 3 tbsp chopped coriander, 3 tbsp oil,salt to taste.

Method:
Puree the sweet corn kernels with 1/2 cup of water into a fine paste in a blender and keep aside.Heat 2 tbsp of oil in a pan and saute the capsicums and cottage cheese till they are lightly browned.Remove and keep aside.Heat the remaining tbsp of oil in the same pan and add the cumin seeds and asafoetida.When the cumin seeds crackle, add the green chillies and ginger, saute for a few seconds and add the pureed corn.Add 1 1/2 cups of water, sugar and salt and bring to a boil.Add the sauteed capsicum and mix well.Serve hot with crusty bread or paranthas.

2.Corn Panki:

Ingredients:
6 tender corn cobs, 2 tbsp plain flour, 2 tbsp semolina, 1 tbsp chopped coriander, 2 tsp finely chopped green chillies, 1/4 tsp soda bi-carb, 2 tbsp fresh curds, 2 tsp oil, salt to taste, 20-30 corn husks cut into rectangles, melted butter and green chutney for serving.

Method:
Grate the corn.To the grated corn, add the remaining ingredients and mix well.Apply a little oil to the corn leaves.Spread a little mixture on each leaf portion and put another greased leaf on top.Cook on a griddle until light brown spots appear on top.Peel off the husks and enjoy the lightly steamed squares with butter and your favourite chutney.

3.Corn Dip:

Ingredients:
1 cup sweet American Corn(cooked), 2 tbsp chilli sauce, 1 tsp oil, 1 tsp mustard powder, 1/2 tsp salt, 1 tsp soya sauce.

Method
Grind the cooked corn into a very smooth paste.Add chilli sauce, mustard powder, oil and soya sauce.Mix well and chill.Serve cool.
