1.Vanilla Buttercream Frosting:
Ingredients:
3 cups icing sugar, 3 tbsp butter, 2 tbsp milk, 3 drops of vanilla essence.
For Garnishing:
Simple basic frosting or icing, 2 egg-whites, 4-5 drops of lemon juice, 400g extra fine icing sugar,3 ml glycerine.
Method:
In a mixing bowl blend all the ingredients for frosting with a hand-blender.First, beat at a medium speed for 2-3 minutes, then increase the speed till frosting is light and fluffy.If the frosting is too thick, then add a little more milk for easy spreading consistency.Spread the icing on the prepared muffin and leave in the fridge to set.
For Making Decoration:
Separate the egg-whites from the yolks and place the egg-whites in a mixing bowl.With the help of a hand-blender beat the egg-whites for a minute.Mix in a portion of the icing sugar and the lemon juice and beat well to form the consistency of unwhipped cream.Continue to add the remaining sugar, bit by bit, and blend well.Mix in the glycerine and blend once again and spread the icing on the prepared muffin cakes with a spatula and leave in the fridge for 10 minutes to set.
2.Chocolate Brandy Frosting:
Ingredients:
3 cups confectioners sugar, 5 tablespoons butter, 2 tablespoons light cream, 3 tablespoons brandy, 3 tablespoons strong coffee, 1/2 grated, sweet chocolate.
Method:
Combine all ingredients in double boiler and cook, stirring until well blended. If necessary, add cream until thin enough to spread.
3.Frosting With Maple Syrup:
Method:
Mix all the above ingredients and place in a stainless steel mixing bowl.Place the bowl on a double boiler and beat with a hand blender for 6-7 minutes or until the icing is light and fluffy, and reaches a spreading consistency.Spread the icing on the prepared muffin cakes with a spatula and leave in the fridge for 10 minutes to set.
4.Cream Cheese Frosting:
Method:
In a mixing bowl mix all the ingredients and, with a hand blender, blend till the icing is smooth, creamy and can be easily spread with a spatula.Spread the icing on the prepared muffin cakes with a spatula and leave in the fridge for 10 minutes to set.
