Easy Frosting / Icing Recipes


1.Carrot Cake Icing:

Ingredients:
8 Oz cream cheese(softened), 4 tbsp butter, 1 box powdered sugar, 1 cup nuts, milk.


Method:
Combine cream cheese, butter, sugar and nuts.Add enough milk until spreading consistency.Whip together till fluffy and smooth(Do not over whip).Keep in fridge till required.

2.Pineapple Fresh Cream Icing:

Ingredients:
100g fresh thick cream, 2 tbsp icing sugar, 4 drops pineapple essence.

Method:
Chill the cream in the fridge for at least 2 hours.Whip together the cream and the icing sugar in a mixing bowl with a hand-blender.Whip till the icing is fluffy and smooth(but do not over-whip because that would spoil the icing and it will become watery).Add the pineapple essence and mix well.Keep in the fridge till required.

3.Peanut Butter Icing:

Method:
Mix 3 heaping tablespoons of peanut butter, 3 heaping tablespoons shortening, one box of powdered sugar, 1/2 cup milk and 1 teaspoon vanilla together. Add cocoa to taste if desired.Whip till smooth and refrigerate.

4.Eggnog Icing:

Method:
Beat butter and egg yolks until smooth.Gradually add confectioners' sugar, 2 cups at a time, alternately with bourbon.Beat well after each addition.This makes enough for a 3-layer cake.
