Yummy Muffin Recipes 1.Blueberry Cream Cheese Muffins: Ingredients: 2 cups Cake flour, 3/4 cup Sugar, 1-1/2 tsp baking powder, 1/2 teaspoon Baking soda, 1 pinch Salt, 3 oz Cream cheese(cubed), 2 teaspoon Lemon juice, 2 teaspoon Vanilla extract, 2 Whole eggs, 4 tablespoon Hot melted butter -160 to 180F, 1/2 cup Milk, 1 cup blueberries. Method: Adjust oven rack to middle position. Preheat oven to 350 degrees F. Line the cups of a muffin tin with 12 paper liners. Set aside. Combine flour, sugar, baking powder, baking soda, and salt in a mixing bowl. Stir well; set aside. Using metal blade, process cream cheese, lemon juice, and vanilla in food processor until smooth. Add eggs and process 15 seconds. Scrape down side of container with a spatula. With processor running, pour hot melted butter through food chute within 10 seconds. Process another 10 seconds. Add milk and process 5 seconds. Add dry ingredients to container and mix with 4 to 6 half-second pulses. Add blueberries and mix until all are incorporated into batter, usually with 3 or 4 half-second pulses. (Or use a spoon to fold them in, if you prefer your berries whole.) Pour an equal amount of batter into each muffin cup, filling each about 3/4 full. Bake 30 minutes. Cool on rack 15 minutes. Makes 12 muffins. 2.Cinnamon Muffins: Ingredients: 2 cups flour, 2 tsp baking powder, 1 1/2 cups sugar, 1 cup vegetable oil, 1 1/2 tsp cinnamon powder, 3 eggs. For Garnishing: Icing. Method: Mix the flour with the baking powder and the cinnamon powder.Beat the eggs till they are light and fluffy.Grind the sugar to a powder.Now mix the eggs, sugar and the oil till these blend well and the mixture is light and smooth.Slowly mix in the flour mixture to obtain a smooth dough.Lightly grease the muffin cups.Spoon a portion of the prepared cake batter into each muffin cup to fill half of each muffin cup.Bake in a preheated oven at 150 degree C for 15-20 minutes till the muffin turns light golden brown on top.The best way to test if the muffins are ready is to insert a toothpick or a skewer in the centre of the cup cake and when it comes out clean, the muffins are ready.Put off the oven and allow the muffins to cool.Garnish with icing and decorations of your choice.Makes approximately 18 muffins. 3.Lemon Muffins: Ingredients: 2 cups flour, 1 1/2 cups sugar, 3 eggs, 1 cup vegetable oil, 1 tsp lemon rind(grated), 1 1/2 tsp baking powder, 1/2 tsp baking soda. For Icing: 3-4 tbsp cheese icing, 2 drops of green colour, cake decorations. Method: Sift the flour with the baking powder and soda and keep aside.Beat the eggs till they are light and fluffy.Grind the sugar and then blend the sugar, eggs and oil and lemon rind in a mixer till they are well blended and the mixture is smooth.Transfer to a mixing bowl and slowly mix in the flour mixture.Pour the batter into greased muffin cups and bake in an oven for 10 minutes at 150 degree C and then lower the flame to 120 degree C and bake for a further 7-8 minutes or until the muffins are golden brown and a skewer comes out clean when inserted in the middle of the muffin. For Making Icing: Use cheese icing and mix 2 drops of green colour and spread the icing on the muffins and decorate the edges with green cake decoration. ********************************************* Next |
