Yummy Muffin Recipes

image4.Chocolate Chip Muffins:

Ingredients:
2 eggs, 1/2 cup oil(125ml), 1 cup milk (240ml), 1tsp. vanilla, 1 3/4 cups all-purpose flour(240g), 1/2 cup sugar(85g), 1/4 cup cocoa(35g), 1Tbsp. baking powder, 1/2 tsp. salt, 1/2 cup semi-sweet chocolate chips(85g).

Method:
Preheat oven to 400 F (200 C) and prepare muffin pan. Grease muffin pan or fill with paper liners. A nonstick pan requires no greasing. In large bowl add and combine well eggs, oil, milk and vanilla. In smaller bowl combine well flour, sugar, cocoa, baking powder, salt and chocolate chips. Combine wet and dry mixtures and fold together gently until just mixed. Spoon into prepared pan. Bake at 400 F (200 C) for 20 minutes. Remove from pan and cool on rack.
Hint: Sprinkle extra chocolate chips on top of each muffin before baking.

5.Strawberry Muffins:

Ingredients:
2 cups flour, 1 1/2 cups sugar, 3 eggs, 1 cup vegetable oil, 3-4 fresh strawberries(cut into tiny bits), 1 1/2 tsp baking powder, 1/2 tsp baking soda, 3 drops orange essence.
For Icing:
4-5 tbsps cheese icing, 3 drops of pink colour, cake decorations or fresh strawberry pieces.

Method:
Sift the flour with the baking powder and soda, and keep aside.Beat the eggs till they are light and fluffy.Grind the sugar and then blend the sugar, eggs and oil and strawberry pieces in a mixer-grinder til they are well blended and the mixture is smooth.Transfer to a mixing bowl and slowly mix in the flour mixture.Pour the batter into greased muffin cups and bake in an oven for 10 minutes at 150 degree C and then lower the flame to 120 degree C and bake for a further 7-8 minutes or until the muffins are golden brown and a skewer comes out clean, when inserted in the middle of the muffin.
For making Icing:
Blend the icing with 2 drops of pink colour.Spread over the muffin and decorate with fresh strawberries or cake decorations.Makes around 18-20 muffins.

image6.Cranberry Orange Muffins:

Ingredients:
2 cups sifted all-purpose flour(sifted), 2/3 cup sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, 1 egg, 3/4 cup milk, 3 tablespoons melted shortening or salad oil, 3/4 cup raw cranberries(chopped), 2 tablespoons grated orange rind, 2 tablespoons chopped nuts.

Method:
Sift dry ingredients together into bowl. Measure remaining ingredients into a "hollow" in the dry ingredients. Stir only until all flour is moistened. Fill 12 greased muffin cups 2/3 full. Bake at 450 degrees F for 18 to 20 minutes. Makes 1 dozen muffins. If using self-rising flour, omit the baking powder and salt.
