Recipes For A Diabetic:

Snacks:

1.Italian Croutons:
Ingredients:
1 chopped onion, 2 teacups fried rice, 3/4 cup grated cheese, 1/2 teacup crushed peanuts, 2 chopped chillies, 1 Equal tablet, 1 tsp lemon juice, 1 tbsp curd, coriander, salt and pepper to taste, 1 tsp oil for seasoning, 1/2 tsp plain flour, bread crumbs.

Method:
Add water to the flour and prepare a batter.Mix the fried rice, cheese, peanuts, onions, Equal tablet, lemon juice, curds and coriander and prepare oblong rolls.Dip the oblong pieces in the batter and roll on the bread crumbs and roast in minimal oil on a non-stick pan.
Variation:
Corn, cottage cheese and vegetables can be diced and served as starters.

2.Cocktail Kebabs:

Ingredients:

100g avocado, 100g cucumber, 2 slices of watermelon, 50g seedless grapes.
For Dressing:
2 tbsp orange juice, 2 lemon, 4-6 chopped mint leaves, 2 tsp oil,Mix and put in a jar and shake well.

Method:

Peel the avocado and cut round pieces,Peel the cucumber, cut round pieces and further cut in half.Scoop 12 round balls from the watermelon slices.Put all the above fruits in a glass bowl.Pour the dressing on the fruits and marinate for 2 hours.On each cocktail stick, put 1 cucumber,1 watermelon and 1 grape.Add avocado last.Serve.
