Christmas Recipes Merry Christmas Wishes From 101lifeStyle.com G.Christmas Brownies(Contd.): 6.Frosted Chocolate Brownies: Ingredients For Brownies: 1/2 cup reduced-calorie margarine, softened; 3 tablespoons reduced-calorie margarine, softened; 1 1/3 cups Sugar; 8 Egg whites; 1/2 cup Nonfat sour cream; 1/3 cup Evaporated skim milk; 2 teaspoons Vanilla extract; 1 1/3 cups All-purpose flour; 1 teaspoon Baking powder; 1/2 teaspoon Salt; 2/3 cup Unsweetened cocoa; Vegetable cooking spray. Ingredients For Frosting: 3 cups Sifted powdered sugar; 1/4 cup Unsweetened cocoa; 1/4 teaspoon Salt; 1/4 cup Skim milk; 1 1/2 teaspoons Vanilla extract.
Method: Brownies: Beat margarine at medium speed with an electric mixer until fluffy; gradually add sugar and beat well. Add egg whites, sour cream, milk and vanilla; beat well. Combine flour, baking powder, salt and cocoa; stir well. Add flour mixture to creamed mixture, mixing well. Pour batter into a 13x9x2-inch baking pan coated with cooking spray. Bake at 350~ for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on wire rack. Spread Creamy Chocolate Frosting over cooled brownies, and cut into squares. Creamy Chocolate Frosting:Combine all ingredients in a medium bowl, stirring until frosting is of spreading consistency.  7.Caramel Walnut Brownies: Ingredients: 1 20.5 oz. package reduced-fat brownie mix; 1 cup quick-cooking oats; 1 cup water; 2 oz. walnut or pecan pieces (about 1/2 cup); 2 Tbsp. fat-free caramel cream topping. Method: Heat oven to 350 Degrees F. In a mixing bowl, combine brownie mix, oats, and water, and blend well. Spoon batter into a 9-inch by 13-inch nonstick baking pan, top with walnuts, and bake 25 minutes or until wooden toothpick inserted in center comes out almost clean. Place on wire rack and let cool completely. Drizzle caramel on top of brownies and cut.  8.Peanut Butter Chip Brownies: Ingredients: 4 egg whites; 1/2 cup buttermilk; 2 1/2 ounces prunes; 1 jar of baby food; 1 teaspoon vanilla; 3/4 cup cocoa; 1/2 teaspoon baking soda; 1/2 cup boiling water; 1 3/4 cups sugar; 1 cup all-purpose flour; 1/2 cup whole-wheat flour; 1 1/4 cups peanut butter chips. Method: Preheat oven to 350F. Beat egg whites until foamy. Stir in buttermilk, prunes and vanilla. Set aside. In a large mixing bowl, combine cocoa and baking soda; ass boiling water and stir until mixture thickens. Stir in egg-white mixture until smooth. Add sugar and flours; blend completely. Stir in peanut butter chips. Pour batter into a 13x9 inch baking pan lightly ocated with nonstick cooking spray. Bake for 30 min. Let cool before cutting.  9.Fudge And Wheat Germ Brownies: Ingredients: 1 6-ounce package semisweet chocolate chips or equivalent of dark chocolate; 3 tablespoons butter; 3/4 cup quick-cooking oats; 1/3 cup toasted wheat germ (no sugar added); 1/3 cup fat-free dry milk; 1/2 teaspoon baking powder; 1 cup chopped walnuts; 4 egg whites; 1/2 cup brown sugar (packed); 1 teaspoon vanilla. Method: In a microwave-safe dish, melt the chocolate chips and butter at 80 percent power. (It takes about 45 seconds depending on the microwave.) Blend well and set aside. Combine the dry ingredients, except for sugar, in a bowl. In another large bowl, beat the egg whites with sugar and vanilla until slightly thick. Stir in the chocolate mixture and then the dry ingredients. Spread in an 8"x8"x2" baking dish sprayed with cooking spray. Bake 20 to 35 minutes at 350°F, until the edges are firm and the top is crisp. Cool completely before cutting or refrigerate overnight before serving. Makes 12 servings.  10.Zucchini Brownies: Ingredients: 3 cups zucchini, grated; 1 1/2 cups sugar; 2/3 cup applesauce; 3 cups flour; 1/4 teaspoon salt; 2 teaspoons baking powder; 2 teaspoons baking soda; 1/3 cup cocoa, or carob powder, sifted; 3 teaspoons vanilla; 1 teaspoon coconut extract. Method: Preheat oven at 350. Prepare a 8 x 15" baking pan with cooking spray and flour. In a mixing bowl, combine zucchini, sugar, applesauce, vanilla, and coconut extract. In another mixing bowl, combine flour, salt, baking powder, baking soda and cocoa/carob powder. Mix wet ingredients with dry ingredients just until moistened. Spread batter in prepared pan.
