C.Christmas Cookies/Breads: 1.Chocolate Brownie Cookie:
Ingredients: 6 tbsp. Butter or margarine, 2 cups toasted chopped walnuts (optional), 1 1/4 cups sugar, 2 tsp vanilla, 3 eggs, 2 tsp. Vanilla, 1 cup flour, 1 1/2 cups pecan halves, 1/4 tsp salt, 6 squares semi-sweet baking chocolate OR 6 squares bittersweet baking chocolate, 4 squares unsweetened baking chocolate, 1 tsp baking powder. Method: Microwave chocolates and butter in a large microwavable bowl on high 1 1/2 to 2 minutes or until chocolate is almost melted, stirring halfway through heating time. Stir until chocolate is completely melted and smooth. 2. Stir sugar into chocolate until blended. Mix in eggs and vanilla. Stir in flour, baking powder and salt. Stir in nuts. Drop by rounded tablespoons, 1 1/2 inches apart, onto greased cookie sheet. 3. Bake 12 minutes or until set. DO NOT OVERBAKE. Cool 5 minutes; remove from cookie sheet. Cool completely on wire racks. Store in airtight container. (Makes about 3 dozen). ********************************************* 2.Gingerbread from Germany: Ingredients: 2 1/2 tbsp of golden syrup, 1/2 cup of butter, 1/2 cup of brown sugar, egg yolk, 2 cups of plain flour, level teaspoon of bicarbonate of soda(free of lumps), 3 level teaspoons of ground ginger, dash on cinnamon(optional), extra flour for rolling pastry, currants, peel, cherries and a little icing. Method: Stand container of golden syrup in hot water to soften.Beat the butter and sugar to a cream, then beat the egg yolk.Beat in the syrup. Slowly add flour, bicarbonate of soda, ginger and an optional dash of cinnamon.With floury hands kneed into a dough. Wrap in plactic and place in fridge for 1 hour, making it easier to roll out.Brush flour on the rolling pin and under the dough. Roll to an even 10 mm (1/3 inch) thick and cut out shapes.Place on a greased tray about 2 cms (3/4 inch) apart and bake in a moderately slow oven (180 degrees celcius/ 350 degrees farenheit) for about 12 minutes.Leave for a few minutes and remove with a spatula.Decorate with icing, pee, cherries etc.This can make gingerbread boys or girls, fat hearts, or small Hansel-and-Gretel houses. ********************************************* 3.Banana Sour Cream Bread: Ingredients: 1/4 cup white sugar, 1 teaspoon ground cinnamon, 3/4 cup butter, 3 cups white sugar, 3 eggs, 6 very ripe bananas(mashed), 1 (16 ounce) container sour cream, 2 teaspoons vanilla extract, 2 teaspoons ground cinnamon, 1/2 teaspoon salt, 3 teaspoons baking soda, 4 1/2 cups all-purpose flour, 1 cup chopped walnuts (optional) . Method Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture. In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans. Bake for 1 hour, until a toothpick inserted in center comes out clean. ********************************************* 4.Cranberry Nut Bread: Ingredients: 3 cups all-purpose flour, 1 cup sugar, 1 tbsp. baking powder, 1/2 tsp. salt, 1/4 tsp. baking soda, 2 tsp. finely shredded orange peel, 1 beaten egg, 1 2/3 cup milk, 1/4 cup cooking oil, 1 cup coarsely chopped cranberries, 3/4 cup chopped nuts . Method In a mixing bowl stir together flour, sugar, baking powder, salt, baking soda, and orange peel. In another mixing bowl combine beaten egg, milk, and cooking oil. Add to flour mixture, stirring just till combined. Stir cranberries and nuts into batter.Pour nut-bread batter into a greased a 9x5x3 inch loaf pan or two 7 1/2 x 3 1/2 x 2 inch loaf pans. Bake in a 350 oven for 1 to 1 1/4 hours for single pan or for 40 - 45 minutes for the smaller pans or till toothpick inserted near the loaf center comes out clean.Cool in the pan for 10 minutes. Remove; cool thoroughly on wire racks. Wrap and store overnight before slicing. Makes 1 large loaf, or 2 small loaves.(18 servings). ********************************************* 5.Luxury Nut & Seed Loaf with Cranberry, Apple and Brandy Sauce: Ingredients: 25g bulgar wheat, 3 x 15ml spoons Soya sauce, 330ml hot water, 175g pine nuts, 175g pistachio nuts, 175g cashew nuts, 225g blanched almonds, 110g sunflower seeds, 110g hazel nuts, 250g onion(finely chopped), 110g poppy seeds, 2 x 15ml spoons dried thyme, 4 x 15ml spoons fresh and finely chopped parsley, 4 x 15ml spoons olive oil, 4 large free-range eggs(lightly whisked), A little oil for pouring on roast. For Sauce: 275g cranberries, 150ml apple juice concentrate, 275g cooking apples(cored and thinly chopped), 60ml brandy, 50ml water. Method Put the wheat in a mixing bowl and pour on the hot water and soya sauce.Cover and let it puff up for 20-25 minutes. Crush nuts and seeds to a medium fine consistency. Mix together with the wheat. Stir in the parsley, thyme, eggs, onions and oil. Mix thoroughly and allow standing.Oil a large baking sheet and line with greaseproof paper. Form a loaf shaped structure with the nut mixture, about 12cm wide, press firmly together and pierce the top with a fork. Pour on a little oil and drop some extra nuts and cap loosely with a foil hood. Bake in oven 375°F/190°CGas Mark 5 for about 40-45 minutes.Take off hood, baste with oil on baking sheet and continue to bake for a further about 15 minutes. Place in a large serving dish, then cool, easing off the paper as you do so.Cover with the hood until ready to decorate. For preparing sauce: Cook all the ingredients together excluding the brandy for about 25 minutes. Add the brandy and re-heat for about 45 seconds.
