F.Christmas Cookies:

1.Christmas Crescent Cookies:

Ingredients:
1/2 lb. butter (2 sticks); 2 cup flour; 2 cup chopped pecans; 5 tablespoons sugar; 2 teaspoon vanilla; 1 tablespoon water; 1/2 teaspoon salt;

Method:
Cream butter and sugar; add vanilla and water. Sift flour and salt, stir into mixture. Add pecans and mix well. Roll into a ball the size of a walnut and shape into crescent.Bake slowly at 325 degrees about 20 minutes. While warm, roll into powdered sugar. They can be packed into a canister with powdered sugar--they last quite a while.

2.Orange Cream Cheese Cookies(Yields: 4-5 dozen):

Ingredients:
2 1/4 cups all-purpose flour; 1 teaspoon cinnamon; 1/2 teaspoon allspice; 1/8 teaspoon salt; 2/3 cup butter, softened; 1 (3 ounce) package cream cheese, softened; 1/2 cup sugar; 3 tablespoons orange juice; 2 teaspoons grated orange peel.

Method:
Mix together flour, cinnamon, allspice and salt. In medium bowl, using electric mixer set on low, beat together butter and cream cheese. Beat in sugar . Add orange juice and peel. Add flour and spices, and beat until combined. Do not overbeat. Chill dough, wrapped in plastic wrap for 2 - 2 1/2 hours or until dough is firm. Preheat oven to 350°F. Roll dough on a lightly floured surface until it is about 1/8 inch thick. Cut into your favorite cookie shape. Bake on a lightly greased cookie sheet in preheated 350°F oven for 8 to 10 minutes or until edges are lightly browned. Cool on wire racks.

3.Chocolate Chip Toffee Cookies(makes 30):

Ingredients:
1 1/2 cups all purpose flour; 1 teaspoon baking soda; 1 cup unsalted room temperature butter (2 sticks); 3/4 cup packed light brown sugar; 3/4 granulated sugar; 1 large egg; 1 teaspoon vanilla extract1 1/2 cups oats; 1 cup dried fruit (figs, cherries, cranberried, apricots, raisins, whatever you prefer); 12 oz semisweet chocolate chips; 1 cup toffee pieces.

Method
Sift flour and baking soda together. Cream butter and sugars together with an electric mixer on medium until the mixture is light and fluffy. This should take about 2-3 minutes. Add egg and mix on high until combined. Add vanilla and mix to combine. Add the flour mixture, mixing on low to combine. Continue mixing to combine the oats, dried fruit, chocolate chips, and toffee pieces. Put heaping tablespoons of dough 2 inches apart on two parchment-lined baking sheets. Bake in 350 degree oven for 14 to 16 minutes. Rotate the baking sheets halfway through bake time.

4.Christmas Cranberry Cookies(Makes 4-5 dozen):

Ingredients:
1/2 c. butter (NO Substitutes); 1 C. Sugar; 3/4 C. packed brown sugar; 1/4 C. Milk; 1 egg; 2 1/2 Tablespoons Orange Juice; 3 C. Flour; 1 teas. Baking Powder; 1/2 teas. Salt; 1/4 teas. Baking Soda; 2 1/2 C. chopped fresh Cranberries; 1 C. chopped walnuts;
For Frosting:
1/3 cup butter (no substitutes); 2 cups powdered sugar; 1 1/2 teaspoon vanilla2-4 T. hot water.

Method
Cream butter and sugars; add milk, egg, and orange juice. Beat smooth. Combine dry ingredients and add to cream mixture. Stir in cranberries (I chop mine in a blender, or food processor; they chop better if you chop them while frozen.) Stir in nuts. Drop by spoonfuls 2" apart onto greased baking sheet. Bake at 350 degrees for 12-15 minutes (until lightly golden on bottom.). Let cool and then frost.
FROSTING: Heat butter in saucepan over medium-low heat until a golden brown color, about 5 minutes. (It's very important that the butter is golden brown, because it gives the butter a different flavor.) Cool for 2 minutes; add powdered sugar and vanilla; stir. Add hot water, a tablespoon at a time, until a spreadable consistency. Frost the cookies.
Notes: Make sure to use real butter, especially for the frosting because heating the butter gives it a wonderful flavor.

5.Spice Cookies(makes 3-4 dozen):

Ingredients:
1/2 cup walnuts or pecans; 2 cups all-purpose flour; 1 teaspoon baking powder; 1/8 teaspoon salt; 1/2 teaspoon cinnamon; 1/8 teaspoon nutmeg; 1/8 teaspoon freshly ground pepper; 1/4 teaspoon ground cloves; 4 tablespoons unsalted butter, softened; 1/2 cup sugar; grated rind of 1/2 orange; 1 large egg; 1 teaspoon orange juice; 1/2 cup confectioners sugar; 1 tablespoon water.

Method
Chop walnuts finely. Mix together flour, baking powder, salt, cinnamon, nutmeg, pepper, and cloves. Stir in chopped walnuts Cream together butter, sugar, and orange rind. Stir in egg and orange juice. Add dry ingredients and stir to combine. Wrap dough in plastic wrap and refrigerate overnight. Preheat oven to 350°F. Roll 1 heaping teaspoon of dough at a time into a ball. Place on lightly greased baking sheets about 1 1/2 inches apart. Bake in center of preheated 350° F oven until firm to touch, but not browned. Put immediately on wire rack to cool. Make glaze by combining confectioners sugar and water. Dip one side of each cookie into glaze.
