Christmas Recipes Merry Christmas Wishes From 101lifeStyle.com F.Christmas Cookies(contd.): 6.Low Fat Oatmeal Cookie: Ingredients: 1 cup all-purpose flour; 1 teaspoon baking powder; teaspoon baking soda; teaspoon salt; 2 tablespoons shortening; 1 cup applesauce; 1/2 cup granulated sugar; 1/2 cup brown sugar, packed; 1 egg (or cup egg substitute); 1 teaspoon vanilla; 1 1/3 cup oats; cup raisins (optional);
Method: First, preheat the oven to 375 degrees. Lightly grease a large baking sheet with non-stick cooking spray. In a large bowl mix together the flour, baking powder, baking soda, and salt. Set aside. In another bowl, whisk together the shortening, applesauce, sugars, egg, and vanilla until the shortening begins to break up into smaller pieces. Fold in the oats and raisins (if desired). Drop the batter in rounded tablespoons onto the cookie sheet. Bake your cookies for 10-12 minutes. Remove the cookies from the oven when theyre slightly browned on the edges, and then cool them for about 5 minutes.  7.Butterscotch Cookies: Ingredients: 1 cup butterscotch-flavored chips; 1 tablespoon shortening; 1 (6 ounce) package original flavor tiny fish-shaped crackers (about 3 1/2 cups); 1 cup broken pretzel sticks. Method: Grease cookie sheet. Melt butterscotch chips and shortening in 3-quart saucepan over low heat, stirring constantly, until smooth; remove from heat. Stir in crackers and pretzels until well coated. Drop mixture by rounded tablespoonfuls onto cookie sheet. Let stand about 1 hour or until firm. Carefully remove from cookie sheet.  8.Peanut Butter Cookies: Ingredients: 1 3/4 cup flour; 1/2 cup shortening; 1 tsp. baking soda; 1/2 cup peanut butter; 1/2 tsp. salt; 1 egg; 1/2 cup sugar; 1 tsp vanilla; 1/2 cup firm packed brown sugar; 2 Tbsp. milk; chocolate kisses. Method Cream together shortening, sugars, and peanut butter. Add egg, milk, and vanilla. Sift together flour, baking soda, and salt and gradually add to creamed mixture. Blend at low speed until well mixed. Shape dough into balls by teaspoonfuls and rill in sugar. Bake at 375 F for 10-12 minutes. Remove from oven. Immediately top each cookie with a kiss, pressing down firmly so cookie cracks around the edges. Carefully remove to rack to cool.  9.Brandied Fruit Cookies:
Ingredients: 3/4 cup packed brown sugar; 1/2 cup butter or margarine — softened; 1/3 cup brandy; 2 eggs; 2 cups all-purpose flour; 2 teaspoons baking powder; 1 teaspoon ground cardamom; 1/2 teaspoon ground cinnamon; 1/2 teaspoon ground nutmeg; 1 cup chopped pecans; 1 cup dried apricots — chopped; 1/2 cup currants; 1/2 cup golden raisins. Method Heat oven to 350º. Grease cookie sheet. Beat brown sugar, butter, brandy and eggs in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, baking powder, cardamom, cinnamon and nutmeg. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Bake 9 to 11 minutes or until light brown. Remove from cookie sheet to wire rack.  10.Ginger Cookie Clock:
Ingredients: 1 cup sugar; 1/2 cup butter or margarine — softened; 1/4 cup molasses; 1 egg; 2 cups all-purpose flour; 1 1/2 teaspoons baking soda; 1/2 teaspoon salt; 1/2 teaspoon ground cinnamon; 1/2 teaspoon ground ginger; 1/4 teaspoon ground cloves; Sugar. Method Heat oven to 375º. Grease 12-inch pizza pan or large cookie sheet. Mix 1 cup sugar, the butter, molasses and egg in large bowl with electric mixer on medium speed, or mix with spoon. Stir in remaining ingredients except sugar. Reserve 1/3 cup dough. Press remaining dough in pan or into 12-inch circle on cookie sheet. Shape reserved dough into numbers and arrows; place on dough in pan to resemble the face of a clock. Sprinkle with sugar. Bake about 10 minutes or until golden brown. Cool completely.
