B.Halloween Treats: 1.Pumpkin Spice Ghost Cake: Ingredients: 1 (18.25-ounce) package spice or carrot cake mix,1 cup Pumpkin, 3 large eggs, 1/3 cup water, 3 tablespoons vegetable oil, 1 teaspoon pumpkin pie spice, 2 (3-ounce) packages cream cheeese, softened, 2 tablespoons butter or margarine, softened 5 1/2 teaspoons vanilla extract, 4 cups powdered sugar, Black string licorice, licorice jelly beans and Halloween candy.
Method: Preheat oven to 350*F (175*C). Grease and flour two 8 or 9-inch-round cake pans.Combine cake mix, pumpkin, eggs, water, vegetable oil and pumpkin pie spice in large mixer bowl until moistened. Beat for 2 minutes or until thoroughly mixed. Pour batter into prepared pans.Bake for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely. Frost with Cream Cheese Frosting. For Cream Cheese Frosting: Beat cream cheese, butter and vanilla extract in small mixer bowl until light and fluffy.Gradually beat in sugar. Spread layers and on top and side of cake. To Garnish: Form licorice strings into ghost shapes; press into side of frosted cake. Use licorice jelly beans for eyes. Arrange candy corn between ghosts on side and around top edge of frosted cake.Makes 12 servings. ********************************************* 2.Halloween Black Cat Cookies: Ingredients: 100 g crunchy peanut butter, 2 eggs, 1/3 cup water, 1pk chocolate cake mix, Plain Chocolate Candy, Red hots. Method: Beat together peanut butter, eggs, and water.Gradually add cake mix.Mix well.Form dough into 1-inch balls. Place on ungreased cookie sheet.Flatten balls with bottom of glass dipped in sugar. Pinch out 2 ears at top of cookie. Add M&M's for the eyes and red hots for the nose. Press fork into dough to form whiskers. Use a knife to carve out the mouth.Bake at 375 degrees for 8-10 minutes.Makes 4 1/2 dozen. ********************************************* 3.Little Goblin Toffee Apples: Ingredients: 10 apples(small), 8 oz. (225g) black treacle (molasses), 4 oz. (125g) butter, 16oz. (450g) brown sugar, 1 tbsp vinegar. Method Thoroughly wash the apples then dry with kitchen paper.Insert a wooden stick in each, downwards through the core, to act as handles.Put the butter, treacle, sugar and vinegar in a pan, mix together and bring to the boil for about 20 minutes.Quickly dip the apples in the hot mixture and then place on a rack to set. ********************************************* 4.Day Of The Dead Spicy Beef Tacos:
Ingredients: 10 taco shells, 1 small lettuce, 2 firm tomatoes, 1lb.(450g) minced beef, 1 tsp. plain flour, 1 small green pepper, one quarter pint of beef stock, 1 medium onion, 1-2 tsp chilli powder, pinch of garlic powder, 1 tbs. tomato puree, pinch of salt, sour cream for dressing. Method Skin and finely chop the onion then mix with the minced beef.Gently fry the beef mixture until browned then stir in the flour and fry about a minute.Stir in the stock, tomato puree and seasonings.Dice and de-seed the green pepper then stir into the beef mixture.Bring to the boil then reduce heat and simmer for about 15 minutes, stirring occasionally.Meanwhile wash and shred the lettuce and dice the tomato finely.Divide the mince mixture between the taco shells, garnish with lettuce and tomato then top with a little sour cream and serve. ********************************************* Previous���Next | |
