F. Thanksgiving Bread Recipes:

1. Thanksgiving Pumpkin Bread:

Makes three loaves
imageIngredients:1 1/2 c. pumpkin, 3/4 c. vegetable oil, 2 1/2 c. flour, 2 c. sugar, 1 1/2 tsp. baking soda, 1 1/4 tsp. salt, 3/4 tsp. nutmeg, 3/4 tsp. cinnamon, 1 c. nuts chopped, 1 c. raisin, 3 1 lb. coffee cans.
Method: Preheat oven to 350 degrees. Beat these together: 1 1/2 c. pumpkin 3/4 c. vegetable oil Then add: 2 1/2 c. flour 2 c. sugar 1 1/2 tsp. baking soda 1 1/4 tsp. salt 3/4 tsp. nutmeg 3/4 tsp. cinnamon 1 c. nuts, chopped 1 c. raisins, if desired Mix until all ingredients are thoroughly moistened. Fill three ungreased 1 lb. coffee cans, 1/2 full. Bake at 350 degrees for 75 minutes. Cool, in the can for 15 minutes and remove from can. Wrap, while still warm, in aluminum foil. Refrigeration not necessary but won't hurt. Slice and place in toaster or microwave to warm.

2. Thanksgiving Cranberry Walnut Bread:

Yields 1 loaf
imageIngredients: 2 cups all-purpose flour; 1 1/2 cups fresh cranberries; 1 egg; 1 cup white sugar; 1 1/2 tsp baking powder; 1 tsp salt; 1/2 tsp baking soda; 1/4 cup butter; 1 tbsp grated orange zest; 3/4 cup orange juice; 1/2 cup chopped walnuts;
Method: Preheat oven to 375 degree F. Lightly grease an 8*4 inch loaf pan. Mix together flour, sugar, baking powder, salt and baking soda. Cut in the butter until the mixture resembles coarse crumbs. In another bowl, beat in the egg, orange juice and orange zest. Blend into the dry mixture. Stir in the cranberries and walnuts. Transfer to a loaf pan. Bake in the preheated oven for 60-70 minutes, or until a wooden toothpick inserted at the center comes out clean. Cool in pan for 10 minutes, remove to wire rack and cool completely before serving.

3. Thanksgiving Dinner Rolls:


imageIngredients:2 (.25 ounce) packages active dry yeast; 1 cup warm water (112 degrees to 115 degrees); 1/2 cup white sugar; 1 tsp salt; 1 cup milk; 1/2 cup shortening; 3 eggs, beaten; 6 cups unbleached flour;
Method Place yeast in warm water and soften. Place sugar and salt in a mixing bowl and set aside. Heat milk and stir in shortening until it melts. Mix eggs with the yeast mixture. Add the milk with shortening to the eggs and yeast mixture. Stir in 1 cup of flour at a time to form a soft dough. Knead on a lightly floured surface until smooth and elastic. Grease a large bowl and place the dough in it. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Turn it out onto a floured surface and shape the dough into desired rolls. Place on greased bread pans. Cover and let rise until nearly doubled, about 30 minutes. Bake rolls at 375 degrees F for 15-18 minutes or until golden. Remove from pans and cool on wire racks.

4. Wholewheat Soda Bread:

Yields 1 loaf
imageIngredients:4 cups wholewheat flour; a pinch of salt; 1 tsp baking soda; 1 tsp baking powder; 1 1/2 cups of milk mixed with 2 tsp curd; 2 tbsp raisins; crushed walnuts or almonds (optional);
Method Sift flour, salt, soda and baking powder into mixing bowl. Make a well in the center and pour in the curd mixed milk. Gradually fold in all the flour. Add in the raisins or nuts if using any. Remember that the dough should be moist, so use more liquid if necessary. Turn onto a floured board and knead lightly to form a loaf. The dough will be gooey, so don't worry. Place in loaf pan and cut a deep cross in the center of the loaf. Bake at 200 degree C (400 degree F) for 30-40 minutes.

5. Thanksgiving Corn Bread:

Yields 1 loaf
imageIngredients:1 cup polenta (corn meal); 3/4 cup self-raising flour, sifted; 1/2 tsp sugar; 1 cup skim milk; 1 egg; 1 tbsp margarine, melted;
Method To make corn bread, combine polenta, flour and sugar in a bowl. Whisk together milk, egg and margarine, then stir into the polenta mixture. Mix to combine. Spread mixture into a greased 8 inches round cake pan and bake for 15-20 minutes, or until bread is golden.
