A Perfect Makeover For The Leftovers


The Party's over and you are left with leftovers....."Don't fret, here is a complete revamp for different left over foods:


1.Rice:

This is a staple leftover food.There is always rice.Here are some interesting ways to revamp leftover rice which will make eating it still fun:


Indonesian Rice Balls(makes-20):

Ingredients

4 cloves garlic; 2.5cm piece of ginger; 2 tsp sugar; 1 tsp salt; 1 green chilli(finely chopped); 2 tbsp soya sauce; 1 tsp chilli sauce; 1 tbsp vinegar; a handful of coriander leaves(finely chopped); 2 cups cooked rice(mashed;not blended-mash with a fork or a potato masher); 3/4 cup finely chopped peanuts; oil for frying;

Method:
Grind together the ginger, garlic, slat, sugar and green chilli.Add the soya sauce, chilli sauce, vinegar and chopped coriander.Mix this into the mashed rice.Lightly grease your hands and divide the mixture into 18-20 portions to make balls of about 2.5 cm diameter each.Sprinkle the chopped peanuts on a plate.Roll each ball over the tray until it is evenly coated with peanuts.Set aside.Heat oil in a Deep fry pan.Deep fry the rice balls, a few at a time over medium heat until golden brown.Remove and drain on kitchen paper.

Roasted Stuffed Tomatoes(serves 4):
Ingredients:
4 firm red tomatoes; 2 tbsp balsamic vinegar; salt and pepper to taste; 1 tsp brown sugar; 1 cup cooked rice; 1/4 cup finely chopped green pepper; 1/4 cup sweet corn(coarsely ground; 1/4 cup grated cheese; 2 tbsp chopped coriander leaves; 6-8 basil leaves(chopped); 3/4 paprika powder; aluminium foil for covering;

Method:
Preheat oven to 180 degree C.Cut the tomatoes in half and scoop out the pulp taking care to keep the shape.Drizzle with half of the balsamic vinegar, salt,pepper and brown sugar.Mix the rice, green pepper, corn, paprika, chopped basil and coriander.Add the cheese, saving about a tbsp and a half for later.Check for salt and pepper and add as required.Mix well and stuff the tomatoes with the mixture.Sprinkle the top with the remaining cheese followed by the remaining balsamic vinegar.Cut eight squares of aluminium foil to cover each tomato but dont press down, keep away from the top.One way of doing this is to stick a toothpick in to maintain the distance between the top of the tomato and the foil.Not too far up through or the rice will dry.About 1 cm away should be sufficient.Bake at 180 degree C until the skin of the tomato begins to split.Serve immediately.

Rice Salad(serves 4):
Ingredients:
2 cups cooked rice; 2 stalks of spring onion or 1 small red onion(chopped); 1/2 red pepper(chopped); 1 small tomato(chopped); 1/2 cup sweet corn; 3 tbsp chopped pineapple; 2 tbsp pumpkin seeds; a handful of chopped basil and coriander; 2 tbsp olive oil; 1 1/2 tbsp lime juice; salt and pepper to taste; 1/2 red chilli powder;

Method:
Mix all the ingredients together in a bowl and chill for about 15-20 minutes before eating.

Rice Wrapped In Cabbage Leaves(Serves 4):
Ingredients:
2 cups cooked rice(mashed not blended, use a fork or potato masher); a few whole bigger, outer leaves of cabbage; 2 tbsp chopped olives; 1/2 cup chopped firm tomatoes; 2 tbsp flaked feta cheese; 1/4 tsp red chilli powder; 1 tbsp olive oil;salt and pepper to taste; 3 tbsp pine nuts(toasted and chopped); 2 tbsp chopped mint leaves; 1 tbsp coriander leaves; 1 tbsp olive oil; 1/2 tsp lime juice; 1/4 tsp red chilli powder; salt and pepper to taste; a few toothpicks;

Method:
Clean the outer, bigger leaves of the cabbage.Mix the olive oil, lime juice, red chilli powder and a bit of salt.Brush the leaves with the olive oil mixture and leave it on for 10-15 minutes while preparing the other ingredients.Preheat the oven to 175 degree C.Mix the remaining ingredients(except the rice) together.Add the rice and some salt and pepper to taste(careful about the salt as feta cheese is quite salty and so are the olives).Roll 2 tbsp of the mixture in each cabbage leaf and pierce with a toothpick to hold it together.Grease a baking tray with olive oil.Put each wrapped roll carefully on the tray and bake in the oven at 175 degree C for about 10-15 minutes.Turn in between and drizzle with oil.Remove and serve.
