A Perfect Makeover For The Leftovers


3.Potato:

Potato is another common leftover item.Here are some ideas for a makeover with leftover potatoes:


Potato Pie:

Ingredients

2 cups leftover potato(mashed); a handful of chopped chives or spring onion greens; 1 tsp mustard; 1/2 cup finely chopped mixed peppers; 1/4 cup grated cheese; 2 tbsp sesame seeds; 1/4 cup finely grated cheese or 3 tbsp parmesan cheese shavings; 3 tbsp breadcrumbs; milk, if required;

Method:
Mix the chives, mustard and mixed peppers to the mashed potatoes.Add the 1/4 cup of cheese and mix well.If it is too firm you can add a bit of milk to soften it.Butter or oil a glass dish and put the mixture into it.Top with the sesame seeds, breadcrumbs and the remaining cheese or Parmesan shavings.Place this in a preheated oven at 180 degree C for about 20 minutes or heat it in the microwave and put it under a grill until the top is brown.
Make It Non-Veg:
Add bits of bacon or even ham to the potato mixture.

Chunky Potato And Tuna Salad(Serves 4):
Ingredients:
300g small leftover potatoes(halved and slightly warmed); 2 tbsp olive oil; squeeze of lemon juice; salt to taste; 1 orange peel(deseeded and chopped); 2 sticks celery(finely chopped); 185g can tuna(drained);

Method:
When the potatoes are slightly warmed, toss them with olive oil and lemon juice and season to taste.When completely cold, mix in the orange pepper, celery and the tuna.

Potato And Ham Hash Browns(serves 6):
Ingredients:
3 tbsp reduced fat butter or margarine; 2 medium leftover potatoes(diced); 1 small onion(finely chopped); 1/2 green bell pepper(finely chopped); 1 cup finely diced cooked ham; 1/4 tsp salt, or to taste; 1/8 tsp ground black pepper; 1/4 tsp dried crumbled thyme;

Method:
Melt butter in a large skillet over medium low to medium heat. Add remaining ingredients to the potato and mix well.Place spoonfuls of mixture in the skillet, flatten slightly and cook for 4-5 minutes each side until until well browned, and golden.Serve with bread or toast.
