Hearty American Fare Non-Vegetarian: 1.Chilled Shrimp And Vegetable Soup: Ingredients 4 florets broccoli; 4 florets cauliflower; 1 potato(quartered); 1 onion(quartered); 50ml tomato puree; 1 tsp sugar; 1 tsp pepper(freshly ground); 1 tsp lemon juice; 50g small-sized prawns(shelled and cleaned); 2 tbsp vegetable oil; salt to taste; Method: Heat oil in a pan and saute the prawns for 2 minutes.Remove and keep aside.In the same oil saute the vegetables, adding salt and pepper to taste.Cool and puree the cooked vegetables in a mixer.Mix in the rest of the ingredients and chill. ********************************************* 2.Scalloped Fish Casserole: Ingredients: 500g fish fillets; 1 tsp dried thyme; ½ tsp pepper; ½ cup butter;1/2 cup flour; 2 cups milk; 4 potatoes; 1 small onion(finely sliced); 1 cup cheese(grated); ½ tsp dry mustard; salt to taste; Method: Boil and peel the potatoes.Cut into circles.Lay the sliced potatoes in a shallow, buttered baking dish.Top with the onion slices and the fish fillets.Sprinkle with thyme and salt and pepper.Melt butter in a saucepan, add flour and cook for 2 minutes, taking care that no lumps form.Put off the flame, whisk in the milk and form a thick sauce.Bring to the boil and continue to cook over a very low flame until the sauce thickens.Stir in the cheese and the dry mustard.Pour this sauce over the fish fillets and bake in a preheated over at 200 degree C for approximately 30 minutes. ********************************************* 3.California Prune Cake: Ingredients: 200g California prunes; 250g butter; 250g sugar; 4 eggs; 250g flour; 3g baking powder; 1 lemon rind(grated); 50g icing sugar; Method: Soften and whisk the butter until it is creamy.Add sugar and whisk again for a few minutes.Add eggs one at a time beating well after each addition.Add chopped California prunes.Mix sifted flour, with baking powder and grated rinds of lemon into the mixture.Line a cake tin with non-sticky grease proof paper.Pour the mixture into the tin with care so that the tin is filled above 2/3 of its hieght.Bake in a preheated oven at 180 degree C for 90 minutes and then leave it to cool in the tin for 10 minutes.Turn out the tin onto a wire rack to cool completely.To decorate the California Prune Cake, dust icing sugar on top. ********************************************* Previous |
