7.Rich Chocolate Rum Truffles(serves-6-8):
Ingredients:

For Filling:

1 cup plain covering chocolate(grated); 1/2 cup icing sugar(sieved); 1/4 cup buts(chopped); 4 tsp cream; 1 tbsp rum;
For Coating:
1 cup plain coating chocolate(grated);
Method:
Melt the chocolate in a bowl over hot water.Add the nuts, icing sugar and rum.Mix it into a stiff paste with cream using a wooden spoon.Shape into balls and leave to dry on a greased proof paper for a few hours at room temperature.Dip each ball in melted chocolate, set and wrap in silver wrappers.

8.Brownie Shortcake(Serves 4):
728.3 Calories per serve - high carbohydrate; medium fat; low fibre.

Ingredients:
1/2 cup unsalted butter; 115g unsweetened or dark chocolate; 1 packed cup brown sugar; 1/2 cup white sugar; 4 large eggs; 1 tbsp vanilla essence; 1 cup flour; 1/4 tsp salt; 1 cup whipped cream; 1 cup sliced strawberries;

Method:
1.Grease and line 23 cm(9 inch) square cake tin.Preheat oven to 180 degree C.
2.In a large bowl placed over saucepan of hot water( so base does'nt touch water), melt butter and chocolate; whisk till smooth.Whisk in sugar(white and brown), eggs and vanilla; add flour and salt.
3.Pour batter into tin.Bake 20 minutes or till skewer through centre comes out clean.Cool in a pan.
4.Cut out four heart shapes with cookie cutter.Split horizontally and sandwich the two cake halves with whipped cream and strawberries.Garnish with dollops of cream and strawberry halves, if liked.

9.Peachy Crunchy Crumble(Serves:4):
1450 Kilojoules/345 Calories per serve - medium carbohydrate; medium fat; high fibre;
This dessert can also be made using canned apricot or pear halves.

Ingredients:

2 * 440g canned peach halves(drained and liquid reserved; pulp of 2 passion fruit; 3/4 cup untoasted muesli; 2 tbsp flour; 1 tbsp brown sugar; 30g polyunsaturated margarine; 4 tbsp chopped walnuts; 1 tsp ground cinnamon;
Method:
1.Pour reserved peach liquid into a shallow ovenproof dish.Then arrange peach halves cavity side up in dish.Spoon a little passion fruit pulf into each cavity.
2.Combine muesli, flour and sugar, then rub in margarine and stir in walnuts and cinnamon.Sprinkle mixture over peaches and bake for 20 minutes.
Serving Suggestion:Serve with low-fat natural or fruit-flavoured yoghurt.
