Golden Rules For Perfect Icecreams


1.The refrigerator must be defrosted before putting in the icecream mixture.

2.Keep the ice cream mixture in an airtight container for freezing.

3.The container must touch the base of the freezer.

4.The quicker the icecream sets the better the results.

5.Lightness in an icecream is achieved with air which passes into it,as such the beating must be done thoughly.

6.Do not add too much sugar to the icecream mixture.The icecream will not set well.

7.Dip the spoon in water to remove liquid glucose from the jar,otherwise it will not come out.

8.Condensed milk: fresh milk which has been condensed on high flame.

9.Before beating the cream add soda bicarb.This will prevent the cream from turning into butter.

10.When icecream is semi set,it should be beaten well so that it is light ,smooth and fluffy.Then add lightly beaten cream and nuts and return it to the freezer.
