Main Dishes(Main Course) 1.Cauliflower With Mint And Chilli Dressing: Ingredients: 500g cauliflower cut into 1" florets boiled in water with 1 tsp salt until tender but crisp, 4 tbsp lime juice or to taste, 1/4 cup olive oil or good salad oil, 1 tbsp finely chopped coriander leaves,2 tbsp finely chopped mint leaves, 3-4 green chillies deseeded and finely minced, 1/2 tsp sugar, salt and pepper to season. Method: Drain and cool cauliflower, place in a serving dish.In a bowl, place all the other ingredients, whisk well, and season with salt and pepper.Pour over cauliflower, toss well and chill upto 2 hours for best results.However 1/2 hour will suffice before serving. ********************************************* 2.Sweet And Sour Vegetable: Ingredients: 3 tbsp oil,6 spring onions cut into chunks, 250g cauliflower florets, 1 tsp garlic paste, 10 tbsp vinegar, 3 tbsp soya sauce, 6 tbsp sugar, 1 tsp chilli powder, 1/2 tsp salt, 4 capsicums cut into chunks without stems, 4 tomatoes cut into chunks,3 pineapple rings cut into chunks, 6 tbsp cornflour dissolved in 6 tbsp of water. Method: Put the oil in a pan, when hot add onions and saute till translucent,add cauliflower florets and garlic paste.Saute.After 5 minutes add vinegar, soya sauce, sugar, chilli powder and salt with 4 cups of water.Cook for 10 more minutes(when the stew begins to boil) and then add capsicum, tomatoes, pineapple and cornflour paste and cover and cook.Cook till the vegetables are tender and well cooked.Remove from heat and serve hot. ********************************************* 3.Navratan Korma: Ingredients: 100g green peas, 100g chopped carrots, 100g chopped French beans, 100g cauliflower florets, 100g cubed potatoes, 100g cubed cottage cheese,50g cashew nuts, 1/2 cup of oil, 1 large onion crushed to a paste, 1 tsp ginger paste, 1 tsp garlic paste, 1 cup tomato puree, 1 tsp chilli powder, 1/4 tsp turmeric, 1/2 tsp garam masala, 50g cashew nut powder, 1-1/2 tsp salt,1-1/2 cups curd, 50g capsicum, 50g pineapple. Method: Boil the green peas, cauliflowers, french beans,carrots till tender.Meanwhile in a pan deep fry the potatoes, cottage cheese and cashew nuts till golden and keep aside.In the same pan fry the onion paste, garlic paste and ginger paste.Add the tomato puree, turmeric, garam masala, cashew nut powder, chilli powder, curd, potatoes, cottage cheese, cashew nuts , pineapple and capsicum.Also add the steamed carrots, peas, cauliflowers and French beans.After 5 minutes add salt with a cup of water.Cook for 15 more minutes.Serve hot. ********************************************* Next |
