Noodles 1.Noodles With Ginger And Spring Onions: Ingredients: Serves:2 225g fresh noodles,3 tbsp oil,2inch piece ginger finely shredded,8 spring onions halved and cut into 2 inch pieces then shredded,green included,1/2 tsp salt,2 tbsp thick soya sauce mixed together with 1 tbsp tomato sauce and 3 tbsp stock or water,1 large cucumber peeled and de-seeded and cut into matchstick-size pieces. Method: Boil noodle in plenty of water with 1 tsp salt and 1 tsp oil.Cook fresh noodles for 2 minutes, then drain.Cook If using dried noodles,cook for 4 minutes,then drain and keep warm.Heat the wok,add oil.Once smoking,add ginger and stir-fry for 30 secs.Drop in spring onions and stir-fry until they start to sizzle,sprinkle with salt,toss well and remove with a slotted spoon and set aside.Add noodles and cucumber to the wok,toss well to cover in oil,stir in sauce mixture,stir fry for 2-3 minutes.Replace spring onion and ginger in the wok,toss well and remove to a serving dish.Serve immediately. Cooks Tip: Add 100g sliced mushrooms along with shelled peas when adding the noodles.You can make this with rice noodle also.Soak noodles in boiling hot water for 15 minutes or until they turn soft and untangle.Cook as above.. ********************************************** 2.Vegetable Hakka Noodles: Ingredients: Serves:4 Fried Noodles:100g noodles(boiled),2 tbsp oil,3 dry whole red chillies(broken into bits),1/2 tsp chilli powder,2 tsp soya sauce,1/2 tsp salt.Vegetables:1 capsicum shredded,1 carrot shredded,1/2 cup shredded cabbage,3-4 flakes garlic(crushed and chopped,optional),2-3 spring onions or 1 ordinary onion,2 tbsp shredded bamboo shoots-optional,3-4 tbsp bean sprouts-optional,2-3 mushrooms(cut into 4 pieces),1/2 tsp each of salt and pepper,1/2 tsp sugar,1/2 tsp ajinomoto(optional),1 tbsp soya sauce,2 tsp vinegar,1 cup water,1 1/2 tbsp cornflour dissoleved in 1/2 cup water. Method: In a pan,heat 2 tbsp oil.Remove from fire,add broken red chillies and chilli powder.Return to fire and mix in the boiled noodles,salt and soya sauce.Fry for 1 minute,till evenly brown in colour.Keep the fried noodles aside.To prepare the vegetables,shred all the vegetables.Heat 3 tbsp oil,reduce heat and add garlic.Add vegetables in sequence of their tenderness(onions,mushrooms, sprouts,bamboo shoots,capsicum,carrot and cabbage).Add ajinomoto, salt and pepper.Add soya sauce and vinegar.Cook for 1/2 minute.Add water.Boil.Add cornflour mixture,stirring continuously.Cook for 1 minute till thick.Remove from fire.To serve,spread the fried noodles on a platter.Pour the prepared hot vegetables over the noodles.Serve. ********************************************** Next |
