Pasta 3.Macaroni And Cheese: Ingredients: Serves:6 750g macaroni(cooked),2 cups cheese(grated),3/4 cup milk,1/2 onion(chopped fine),a pinch of pepper powder,Salt to taste,2 tbsp butter. For Garnishing: 4 spring onions (sliced),7-8 mushrooms(sliced and sauted). Method: Combine onion and butter in a casserole.Microwave on medium high for 3 mins.Stir in the remaining ingredients.Cover with glass and microwave on high for 4 minutes.Stir intermittently and cook for 5 mins on medium high.Garnish with mushroom and spring onions. ********************************************** 4.Cold Pasta Primavera(Pasta Salad): Ingredients: 400g sphagetti,200g mushrooms(washed,wiped and sliced),200g broccoli(cut into small florets)or cauliflower(blanched for 4-5 min in salted water),100g fresh peas(blanched),1 large thick leek(cut into thick2 inch pieces and blanched),10-12 cherry tomatoes,1 large yellow zucchini(sliced into 1 inch pieces and blanched)or yellow pepper finely sliced,1 large red pepper finely sliced,1 large green pepper finely sliced,25g fresh basil leaves chopped,100g finely chopped mozzarella cheese or any other cheese of your choice. Dressing: 1/4 cup good olive oil,1/4 cup light cream,1 large clove garlic minced, 2 tbsp white wine vinegar or to taste,juice of 1 lime or to taste,1/2 tsp freshly ground black pepper,1 tsp sugar or to taste,1 tbsp finely minced onion,1 tbsp chopped parsley,salt to taste,50g roughly chopped walnutes to garnish. Method: In a bowl,whisk together all the dressing ingredients until well blended and chill.In a large pan bring water to a rolling boil.Stir in 1 tsp salt and 1 tsp oil,add sphagetti and cook as per instructions on the packet.Drain and place in a dish pour,1/3 cup dressing over it and toss well.Once cool,put into the fridge to chill for upto 3 hours before serving.In another bowl place all the vegetables,half the cheese and the basil leaves,pour the remaining dressing over them and toss well and chill.Just before serving,mix together vegetables,sphagetti,remaining basil leaves and cheese.Place equal portions on small plates or bowls,sprinkle with chopped nuts and serve. ********************************************** 5.Sphagetti Pomodoro: Ingredients:
300g sphagetti,salt to taste,1 tsp white oil,200g tomatoes,3 spring onions,7-8 cloves of garlic,2-3 green chillies,100g green cabbage,3 tbsp olive oil,1/2 cup water,1 tsp sugar,grated cheese. Method: Boil sphagetti with with and 1 tsp white oil,until soft.Drain and keep warm.Chop tomatoes,spring onion,garlic,green chillies and coarsely chop green cabbage.Heat olive oil in a large saucepan.Fry the chopped garlic and green chillies in it for a few minutes.Add the chopped spring onions and tomatoes.Cook until the tomatoes get thoroughly blended.Add 1/2 cup water if needed.Add 1 tsp sugar and salt to taste.Put in the chopped cabbage and sphagetti.Cover the sphagetti well with the tomato mix.Pour it in a serving dish.Generously sprinkle grated cheese on it and serve hot. ********************************************** Previous |
