1.Hot Dip For Raw Vegetables:
Ingredients:
5 flakes garlic, 3 tbsp milk, 1 1/4 cups olive oil, 4 tbsp butter, 2 boiled potatoes.

Method:
Chop garlic very finely and leave it in milk for a few hours to remove some of its pungency.Put oil and butter in a apn.Add mashed potatoes and drained garlic and cook on very low heat for about 15 min., stirring from time to time.Serve immediately with prepared vegetable salads.

2.Tomato Sambal:
Ingredients:
2 ripe tomatoes(finely sliced), 1 onion(finely sliced), 1-2 green chillies(finely chopped), 1 tbsp lemon juice, freshly ground black pepper powder, salt to taste, 2 tbsp coconut(freshly grated).

Method:
Combine tomatoes, onion, chillies, lemon juice, pepper and salt.Sprinkle with dessicated or freshly grated coconut to serve.

3.Yoghurt With Cucunber And Mint:
Ingredients:
2 cups(500ml)plain yoghurt, 1 cucumber(finely chopped), 4 spring onions(finely chopped), 1 fresh red chilli(finely chopped and seeds removed), 1 tsp grated lemon rind.

Method:
Combine all ingredients in a bowl,refrigerate and serve chilled as a side dish.
