Sundays are special for a family as all the family members are at home in a relaxed mood.So, cook up a special dish each Sunday and see how much your family will look forward to each Sunday after a tiring and hectic week? Here are some mouth-watering and heart-warming recipes for you and your family to enjoy.

1.Potato Soup:
This is a fragrant, colourful and healthy soup which can be whipped up quickly for unexpected guests. The soup can be served either hot or cold.It is made without any oil or butter.The hydrolysed protein in the seasoning cubes not only adds flavour to the soup but also helps to thicken it.All the sweet, sharp, tangy flavours are absorbed very well by potatoes.Adding wine to soups towards the end of the cooking helps to enhance the taste and flavours of the soups.You can of course omit it if you're not wine friendly.

Serves 6
Ingredients:

2 white onions(pureed), 2 cloves garlic(cut into slivers), 350g potatoes(grated with the skin), 8 cups of water, 3 seasoning cubes, 6-8 green peppercorns in brine, 4 sun-dried tomatoes(sliced), 3 green chillies(de seeded and slit), a pinch oregano or celery seeds, 2 tbsp of paprika sauce, dash of green tabasco, dash of balsamic vinegar, juice of 1 lemon,2 tbsp dry white wine(optional), 2 tsp sugar, about 1 1/2 tbsp salt.
For The Garnish
2 tbsp coriander(chopped), 2 tbsp spring onion greens(chopped), 2 tbsp spinach(chopped).

Method:

Put the onion puree and garlic in a pan, without any oil or butter, and cook over a very slow flame till the onions dry out and the flavours are released.The onions should not be discoloured or burnt as this will ruin the flavour of the soup.Add the potatoes along with 8 cups of water and salt and bring the soup to a boil.Add the seasonong cubes, green peppercorns, sun dried tomatoes, sugar, green chillies, oregano, tabasco and balsamic vinegar and let the soup simmer for about 10 minutes or till the potatoes are cooked.They should be translucent and not over cooked.Finish the soup with the paprika sauce, lemon juice or dry white wine and garnish with coriander, spring onion greens and spinach.

2.Char-Grilled Pepper And Feta Cheese Salad:
A colourful and delicious salad.The peppers used for the salad are char-grilled, peeled and marinated with sugar, olive oil, vinegar and green garlic.These can be stored refrigerated for a long time.The sesame seeds used in the salad not only enhance the appearance but are healthy as they are rich in iron and amino acids.

Ingredients:

1 bunch iceberg lettuce or spinach, 300g feta cheese or cottage cheese(cut into cubes), 1 cup alfalfa sprouts.
For The Char-Grilled Peppers:
3-4 peppers(red and yellow), 1 tsp sugar, 2 tbsp balsamic vinegar, 1 tbsp grated garlic.
To Be Mixed Into Dressing:
100ml olive oil, 1 tbsp balsamic vinegar, 1 tsp sugar, juice of 1/2 lemon, 1 tbsp chopped coriander, 1 tbsp paprika sauce, 1 tsp tabasco sauce, crushed black pepper to taste.
For The Garnish:
1/4 cup olives(sliced), 1/4 cup sun-dried tomatoes(sliced), 1/4 tsp paprika, 2 tbsp sesame seeds.

Method:

To make the char-grilled peppers, grease them with some olive oil and roast them over an open flame till the skin is browned.Place them in a zip lock bag and allow them to sweat.Remove them from the bag and peel off the skin and discard.Cut into thick strips.Combine the sugar, vinegar and the garlic in a bowl and marinate the peppers in this mixture for at least 30 minutes.Refrigerate while they are being marinated.Layer the bottom of the salad bowl with iceberg lettuce and sprinkle some sugar and olive oil and crushed black pepper over the lettuce.Arrange the peppers, feta cheese, and alfalfa sprouts over the lettuce layer.Spoon the dressing on top, garnish with the olives, sun-dried tomatoes, sesame seeds and paprika.Serve immediately.
