2.Pinwheel Sandwiches:

Ingredients:
1 loaf of unsliced brown or white bread.
For Filling:
250g cream cheese, 1/2 cup dates(finely chopped), 3/4 cup walnuts(finely chopped), 1 tsp orange rind(finely grated).

Method:
Cut the crusts from the loaf.Cut the loaf lengthwise into slices.Combine cheese, dates, walnuts and orange rind.Spread the filling evenly onto each slice; roll up from either long or short side of bread.Wrap tightly ina plastic wrap and refrigerate for 1 hour.Slice into rounds or wheels using serrated knives.

3.Choux Puffs:

Ingredients:
60 g butter, 3/4 cup water/3/4 cup plain flour, 3 eggs(beaten).
For Cheese Filling:
20 g butter, 125 g button mushrooms(sliced), 60g butter, 1/4 cup plain flour, 1 tsp black pepper(freshly ground), 1 cup milk, 1/4 cup cream, 1/2 cup cheddar cheese(grated), 1/4 cup parsley(finely chopped), 1 tbsp mayonnaise.

Method:
Preheat an oven to 210 degree C.Grease a 32*20 cm oven tray with melted butter.Combine butter and water in a pan.Stir over a low flame until butter melts.Bring to the boil.Remove the pan from fire.Add flour all at once.Beat until it is smooth, using a wooden spoon.Return to stove, heat till the mixture thickens and leaves the sides of the pan.Remove from fire.Let it cool slightly.Transfer the mixture to a bowl.Add eggs gradually, beating until the mixture is glossy and thick.Spoon a heaped tbsp of pastry onto prepared trays.Sprinkle with cold water.Bake for 15 minutes.Reduce heat to 180 degree C. Bake further 15 minutes until it is crisp and brown.Cut puffs in half, remove any uncooked mixture.Return the puffs to oven for 3-4 minutes or until they become dry.Spoon the filling into the base of each puff, replace tops and serve immediately.
For Making Cheese Filling:
Heat butter in a pan, add mushrooms.Cook over a low flame for 3 minutes or until mushrooms are just tender.Add flour and pepper.Stir over a low flame for 2 minutes or until the flour mixture is light golden.Add combined milk and cream gradually to the pan, stirring until mixture is smooth.Stir continuously until mixture boils and thickens.Boil for another minute.Remove from fire.Stir in cheese, mayonnaise and parsley.
