4.Plum Tarts:

Ingredients:
1 cup sugar, 1/2 cup butter(softened), 2 eggs, 1 teaspoon vanilla, 1 cup flour, 1 teaspoon baking powder, Salt to taste, 12 plums(halved and pitted), 1 tablespoon sugar more or less, 1 tablespoon cinnamon .

Method:
Grease and flour a 9-inch springform pan; preheat oven to 350 degrees.Cream sugar and butter until light in color.Beat in eggs and vanilla.Sift dry ingredients and stir into batter.Spoon into pan.Cover with plum halves, skin side up.Sprinkle with sugar and lemon juice; adjusting to tartness of fruit, sprinkle with cinnamon.Bake for one hour at 350 degrees. Best served warm.It can be frozen and reheated.

5.Mushroom Tofu Burgers:

Ingredients:
1 1/2 cups chopped onion, 3/4 pound fresh mushrooms(cleaned and sliced), 1/4 cup chopped red pepper, 1 1/2tbsp chopped garlic, fresh ground pepper and salt to taste, 1tbsp olive oil, 2pounds firm tofu(drained), 3 cups quick-cooking oats, 1package frozen chopped spinach(thawed and drained), 4tbsp soya sauce, 2tsp italian seasonings, 2teaspoons cumin, 2teaspoons lemon juice, 1tbsp worcestershire sauce.

Method:
Preheat oven to 350 degrees. In a skillet over medium high heat, saut‚‚ onions, mushrooms, red pepper, and garlic in oil until tender, about 3 to 5 minutes. Season with salt and pepper. Mash tofu in a large bowl. Add oats, spinach, and seasonings. Mix well. Shape into 12 patties and place on nonstick baking sheet. Bake for 20 minutes; flip and bake an additional 10 to 15 minutes. Serve on bun or roll or in pita. Spread with mayonnaise or mustard, if desired. Garnish with lettuce.Serve hot with tomato ketchup.
