Diwali Card Party Recipes:

1. Tomato Crostini:(veg)
Serves 4
imageIngredients:
2 ripe tomatoes; 30 ml extra virgin olive oil; 4-5 fresh basil leaves; 1 tsp garlic flakes; salt and pepper to taste; 8 slices of bread (French Baguette);
Method:
Cut the tomatoes into small cubes. Marinate them for 30 minutes in oil. Chop basil and garlic. Season it with salt and pepper. Mix it with the marinated tomato cubes. Grill or roast the bread slices and top them with the tomato mixture. Serve immediately.
Tip: Do not marinate the tomatoes for too long, as it will release water and end up making the bread soggy

2. Vegetarian Espadata:(veg)
Serves 2
Ingredients:
1 onion; 1 green bell pepper; 1 yello bell pepper; 1 zucchini; 1 tomato; 200g cottage cheese; For The Marination: 2 tbsp honey; juice of 1 lime; 6 tsp olive oil; a pinch of chilli powder; salt and pepper to taste;
Method:Cut all the vegetables and cottage cheese into chunks of the same size. Mix the ingredients for marination in a bowl. Marinate the chunks gently and refrigerate for an hour. Pierce these chunks alternately into barbeque skewers. Grill as per taste. Serve hot.

3. Stuffed Olives (non-veg):image
Serves 4
Ingredients:
12 stuffed pimento olives; 1 egg, beaten; flour for rolling; oil for frying;
Method:
Drain the olives. Dip them in the beaten egg and then roll them in the flour and fry. Serve immediately.
