New Year Recipes:

We usually associate New Year with traditional good luck foods. The Dutch tradition is to eat donuts on New Year's Day for good fortune as they believe anything in the shape of a ring is good luck, because it symbolizes "coming full circle," completing a year's cycle.

The Americans celebrate the new year by consuming black-eyed peas. These legumes are typically accompanied by either hog jowls or ham. Black-eyed peas and other legumes have been considered good luck in many cultures. The hog, and thus its meat, is considered lucky because it symbolizes prosperity.

Cabbage is another "good luck" vegetable that is consumed on New Year's Day by many. Cabbage leaves are also considered a sign of prosperity, being representative of paper currency. In some regions, rice is a lucky food that is eaten on New Year's Day. In Spain it is a traditional practice to eat 12 grapes on New Year's Eve. Spinach, Cornbread are also eaten on New Year.

A.New Year Eve Appetizers:

image1.Lemon Pepper Mushrooms(makes 8 servings):
Ingredients:
8 1g. mushrooms; 1 tbs. chopped chives; 2 tbs. lemon juice; 1 tbs. mayonnaise; 1/2 tsp. lemon pepper;
Method:
Select large, firm mushrooms and wipe with a damp cloth. Remove stems, discard lower half and chop upper half of the stems finely. In a bowl combine the remaining ingredients. Stuff mushrooms with the mixture. Bake in a shallow pan 8 - 10 minutes at 450 degrees. Serve immediately.

image2.Corn Chips With Sweet Salsa(makes 96 chips):
Ingredients:
For Tortillas:
6 corn tortillas; Salt (optional)
For Salsa:
2 1g. ripe tomatoes; 2 tsp. chili peppers, finely chopped; 3 tbs. scallions, finely chopped; 1/4 tsp. ground coriander; 2 tbs. granulated sugar;
Method:
For Tortillas: Preheat oven to 350 degrees. Cut tortillas into sixteenths. Place on baking sheet. If salting, spray chips lightly with cooking spray and sprinkle with salt. Bake for 20 - 25 minutes.
For Salsa: Blend all ingredients in a food processor. Chill or serve immediately.

image3.Spinach Dip:
This classic dip is good with crackers or vegetable sticks. Served in a carved bread bowl, this creamy appetizer is perfect for large gatherings.
Ingredients:
1 package Vegetable Soup Mix (Dry); 1 large container sour cream; 1 cup mayonnaise; 1 small box frozen chopped spinach, thawed and drained; 1 small can tiny shrimp; 1 small can crabmeat; chopped green onions (optional); shredded cheddar cheese (optional); 1 large round bread loaf;
Method:
Add and mix all ingredients except bread. Cut the top off the bread, remove most of the inside bread to form a "bowl". Add the dip to the bread, replace the lid, refrigerate for 2 hrs. Serve dip with vegetable sticks or crackers.

image4.Ham And Cheese Canapes(serves 25):
Ingredients:
1/4 lb shredded Swiss cheese (125 g); 1/4 lb finely diced ham (125 g); 1/2 cup mayonnaise (125 mL); 1/4 cup diced green onions (125 mL); 2 tbsp Dijon mustard (25 mL); 1/2 tsp ground black pepper (2 mL); 1 French loaf;
Method:
Pre-heat oven to 375°F (190°C). Combine cheese, ham, mayonnaise, green onions, mustard and pepper in a medium bowl. Slice French loaf on the diagonal into 25 1/4-inch (5 mm) slices. Spread a tablespoon of dip on each slice and place on a baking sheet. Bake for about 20 minutes, or until canapés begin to brown. Serve immediately.

image5.Spiced Orange Chicken Wings(serves 24):
Ingredients:
1/2 cup honey; 1/4 cup orange juice; 1 cup Creamy Style Italian salad dressing; 1 tablespoon Tabasco sauce; 24 chicken wings;
Method:
In a medium bowl, mix honey, orange juice, salad dressing and Tabasco sauce. Place chicken wings in roasting pan and pour mixture over the wings. Turn the wings to make sure they are well coated. Refrigerate for several hours or overnight to marinate. Grill or broil for 8-10 minutes on each side. Serve on large platter with salad dressing or other dips in small dishes on the side.
