New Year Happy New Year Wishes(2008) From 101lifeStyle.com New Year Recipes: New Year Eve Recipes: E.New Year Eve Rice Dishes(Contd.): 6.New Year's Paella: Ingredients: 8 c Fish or Chicken Stock; 1 tb Saffron Threads; 3 tb Olive Oil; 6 Garlic Cloves, chopped; 2 Onions, medium, chopped; 1 Red Bell Pepper, chopped; 1 Green Bell Pepper, chopped; 8 Chicken Pieces, boned; 8 Chorizo Sausages in chunks; 8 oz Squid, cut into rings; 4 c Rice; 4 Tomatoes, peeled, in chunks; 1 Salt; 1 c Green Peas, shelled; 1/2 c Black Olives, sliced; 1 Parsley, chopped; 1 1/2 lb Rockfish, cut into chunks; 2 lb Mussels, rinsed, debearded; 2 lb Shrimps, large, peeled; Method: Bring the stock to a boil, add $affron, simmer 10 minutes, and set aside. In a large paella pan or other large pan, heat the olive oil. Add the garlic and saute just till it begins to color. Add the onions and saute to soften. Add the peppers and cook slightly, then remove the vegetables form the pan and set aside. Add the chicken and brown, remove from pan. Add sausage chunks and brown, remove from pan. Add the squid and toss briefly. Add rice, tomatoes, stock, salt, sausage, chicken, the reserved vegetables, peas, olives, and parsley, reserving some of the parsley for garnish. Stir, cover, and bring to a boil. Remove cover and arrange rockfish pieces on top. Replace cover and cook about 5 minutes more. Uncover and add mussels, cover and cook 5 minutes. Add the peeled and deveined large shrimps, cover and cook until mussels open, shrimp are cooked, and rice is tender. Add more stock or water at any point if the rice appears too dry. The rice should be moist, not soupy. Let the paella stand covered about 5 minutes before serving. Sprinkle with remaining parsley. 7.Almond Mushroom Wild Rice: Ingredients: 3 cups uncooked wild rice; 7 1/2 cups chicken broth; 3 cups sliced fresh mushrooms; 1 1/2 cup slivered almonds, toasted; 6 tablespoons butter, melted; 6 tablespoons chopped green onions; Method: Rinse and drain rice; place in a baking dish coated with non-stick cooking spray. Add the remaining ingredients; mix well. Cover and bake at 325° F. for 1 1/2 to 2 hours or until liquid is absorbed and rice is tender. 8.New Year Fried Rice: Ingredients: 3 Strips bacon, diced; 3/4 c chopped green onions and tops; 1/3 c diced red bell pepper; 1/4 c frozen green peas, thawed; 1 Egg, beaten; 4 c Cold, cooked white rice; 2 tb Soy sauce; Method: Cook bacon in wok or large skillet over medium heat until crisp. Add green onions, red pepper and peas; stir-fry 1 minute. Add egg and scramble. Stir in rice and cook until heated, gently separating grains. Add soy sauce; cook and stir until heated through. Serve immediately. 9.Pork and Black-Eyed Pea Jambalaya(serves 6): Ingredients: 8 ounces smoked sausage, sliced 1/4-inch thick; 1 pound lean pork chunks, cut into 1-inch cubes; 1 teaspoon Cajun seasoning; 1/4 cup oil; 1 cup chopped onion; 1/4 cup chopped bell pepper; 1/4 cup chopped celery; 1 cup water; 1 cup chicken broth; 1/4 cup butter; 1 teaspoon salt, or to taste; 1/4 teaspoon black pepper; 1/4 teaspoon ground cayenne pepper; 1 cup uncooked long grain rice; 1 (15 to 16 ounce) can black-eyed peas, drained; 1/4 cup chopped parsley; 1/4 cup sliced green onion tops; Method: In a heavy 4-quart kettle or Dutch oven, brown sausage and pork in hot oil. Season with the Cajun seasoning. Add onion, bell pepper and celery. Cover and cook over medium heat 20 to 30 minutes, or until pork is nearly done. Skim off excess fat. Add water, broth, butter, salt, and red and black peppers. Bring mixture to a boil. Add rice and black-eyed peas, stirring to blend. Cover and cook 25 to 30 minutes or until rice is cooked. Add parsley and onion tops the last 5 minutes. 10.Green Rice With Spinach And Cheese(serves 6-8): Ingredients: 1 cup long grain rice; salted water; 2 eggs, well beaten; 3/4 cup milk; 1/4 cup melted butter; 1/4 cup shredded sharp Cheddar cheese; 1 tablespoon grated onion; 1/3 cup minced fresh parsley; 2/3 cup finely chopped fresh spinach; 1 teaspoon Worcestershire sauce; 1 1/4 teaspoons salt; Method: Cook rice in boiling salted water, following package directions. Combine rice with the eggs, milk, butter, cheese, onion, parsley, spinach, Worcestershire sauce, and salt. Pour into a greased and floured 8-inch square baking dish.
