6.Cranberry Oatmeal Bread:
Ingredients:
1 cup oatmeal; 1-1/4 cups hot water; 3/4 cup butter, softened; 1/2 cup sour cream; 1-1/4 cups brown sugar; 2 Tbsp. grated orange peel; 1 egg; 2-1/2 cups flour; 2 tsp. baking powder; 1/2 tsp. baking soda; 1/2 tsp. salt; 1-1/2 tsp. cinnamon; 1-1/4 cups chopped cranberries; 1/2 cup chopped walnuts; 1/4 cup sugar; 1/2 teaspoon cinnamon;
Method:
Preheat oven to 350 degrees F. Grease and flour two 8x4" loaf pans and set aside. In medium bowl, combine oats and hot water, stir, and let stand for 5 minutes. In large bowl, beat butter and brown sugar until fluffy. Add oat mixture, sour cream, orange peel, and egg and blend well. Add flour, baking powder, baking soda, salt, and 1-1/2 teaspoons cinnamon and mix gently. Fold in cranberries and walnuts. Spoon batter into prepared pans and smooth to level. In small bowl combine 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle over batter. Bake at 350 degrees F for 55 to 65 minutes until bread is golden brown and pulls away from the sides of the pan. Cool 5 minutes, then carefully run a knife around the edges of the breads and remove to wire rack to cool. Wrap in plastic wrap to store.

7.Easy New Year Cheese Bread(serves 10):
Ingredients:
(1 pound) loaf unsliced Italian bread; 1/3 cup butter melted; 1 tsp poppy seed; ¼ tsp garlic salt; 10 slices cheddar cheese(about 1/2 of 8-ounce package); 10 slices Monterey Jack Cheese(about 1/2 of 8-ounce package); 1 tbsp chopped fresh parsley;
Method:
Heat oven to 350°F. Cut loaf into 10 (1-inch) slices almost to bottom crust. Combine butter, poppy seed and garlic salt in small bowl; mix well. Brush cut-sides of bread with butter mixture. Place 1 slice cheddar and 1 slice Monterey jack cheese in each cut; sprinkle with parsley. Wrap loaves loosely in heavy-duty aluminum foil; seal top and ends. Bake for 25 to 30 minutes or until heated through and cheese is melted.
Grilling Directions: Prepare bread as directed above. Prepare grill placing coals to one side; heat until coals are ash white. Place bread on grill opposite coals. Cover; grill until heated through and cheese is melted (25 to 30 minutes).

8.Sweet Garlic Shortbread(makes 50 pieces):
Ingredients:
300 gplain flour; 120 g rice flour (sift with plain flour together); 250 g butter; 160 g caster sugar; 3 tablespoons garlic bread seasoning; some McCormick Paprika - Hungarian;
Method:
Heat oven temperature to 170 degree C. Lightly grease a baking tray. Add garlic bread seasoning into sifted flour and mix. Set aside. Cream butter and sugar until light and fluffy. Add flour mixture and mix until a soft dough is formed. Roll out dough to 5 mm thickness onto a lightly floured surface. Cut dough with a pastry cutter and place onto prepared tray. Use a fork to prick shortbread and sprinkle some McCormick Paprika over them. Bake for 20 minutes or until lightly brown in color. Remove shortbread from oven and leave to cool before storing in an airtight container.

9.Cider Pumpkin Bread with Raisins and Walnuts:
Ingredients:
2 cups brown sugar; 2 cups pumpkin puree; 2 eggs; 1 cup oil; 1 cup apple cider; 4 1/2 cups all-purpose flour; 2 tablespoons baking powder; 1 tablespoon ground cinnamon; 1 cup raisins; 1 cup walnuts;
Method:
Preheat oven to 350 degrees F. Combine brown sugar, pumpkin puree, eggs, oil, and cider. Add dry ingredients to pumpkin mixture and mix until moistened. Add raisins and walnuts and mix thoroughly. Divide the batter into 2 portions and pour into 2 greased loaf pans. Place in oven and bake for 50 minutes. Cool in pans on a rack until room temperature. Remove from pans and serve.

10.Potato Wholemeal Bread:
Ingredients:
225 g potatoes; 2.5 ml sugar; 25 g margarine; 15 g fresh yeast; 700 g whole meal flour ; 10 ml salt;
Method:
Boil the potatoes, then drain and reserve the water. Mash or sieve until completely smooth, then stir in the sugar and margarine and 275 ml of the reserved hot cooking water. When well blended, leave to cool. Crumble in the yeast, stir well and leave in a warm place for 10 minutes, until bubbly. Gradually stir in the flour and salt to make a soft dough and mix until it is smooth enough to leave the sides of the bowl. Knead for about 10 minutes until smooth and elastic. Wrap loosely in greased polythene and leave in a warm place until doubled in size. Heat the oven to 230oC (450oF), Gas 8. Grease and warm 2 X 450 g loaf tins. Turn out the dough and knead again until it is smooth. Shape the dough into the loaf tins, cover loosely with greased polythene and leave in a warm place until doubled in size. Bake for 15 minutes, reduce heat to 190oC (375oF), Gas 5 and continue baking for 45 minutes, or until the loaves sound hollow when tapped.
Serving Suggestion: This bread is very good with cheese and crisp pickled vegetables or with cold meat and chutney.
