H.New Year Eve Sauce Recipes:

1.Horseradish Sauce:
Ingredients:
1 (8-ounce) container sour cream; 3 to 4 tablespoons prepared horseradish; 2 tablespoons white wine vinegar; 1 tablespoon mayonnaise; 1 tablespoon chopped fresh parsley; 1/2 teaspoon salt; 1/8 teaspoon pepper;
Method:
Stir together sour cream and remaining ingredients.

2.Barbecue Sauce(yield 2 cups):
Ingredients:
3/4 cup minced fresh onion; 1 cup cider vinegar; 3/4 cup ketchup; 3 tablespoons dark brown sugar; 1 tablespoon low-sodium Worcestershire sauce; 1 teaspoon chili powder; 1 teaspoon hot sauce;
Method:
Place onion in a 1-quart glass measure. Microwave at high 2 minutes. Add remaining ingredients; stir. Cover with wax paper; microwave at HIGH 10 to 12 minutes, stirring every 3 minutes.

3.Cocktail Sauce:
Ingredients:
1 cup chili sauce; 1 cup mayonnaise; 1/4 cup pickle relish; 1 hard cooked egg, chopped; 1/2 teaspoon prepared mustard, brown or your favorite; 1 teaspoon grated onion; 1 tablespoon lemon juice;
Method:
Combine all sauce ingredients; chill. Serve sauce with baked or broiled shrimp.

4.Rum Sauce:
Ingredients:
2 cups Milk; 4 Egg yolks; 1/2 cup Sugar; 6 tablespoons dark rum; 1/2 cup heavy cream, whipped;
Method:
In top of double boiler, scald milk.In another bowl, beat yolks with sugar and gradually stir in warm milk, stirring constantly. Return to top of double boiler and cook and stir over simmering water until sauce coats back of spoon. Strain through a fine mesh strainer into bowl and cool. Stir in rum and whipped cream. Chill until serving time. Wonderful with chilled fruits.

5.Aromatic Peppercorn and Chimichurri Sauce:
Ingredients:
2 to 10 cloves garlic, peeled, and chopped coarse; 1 or more red jalapeno, stemmed, seeded, chopped coarsely; 1/4 cup fresh oregano leaves; 1 cup fresh parsley leaves; 1/4 cup red wine vinegar; 1/2 cup olive oil; 1/4 teaspoon salt and whole peppercorns to taste;
Method:
Combine garlic and jalapeno in food processor and pulse to mince finely. Add oregano and parsley; pulse to finely chop. Add remaining ingredients and process until smooth. Use immediately or refrigerate until ready to use. Use to baste shrimp, beef, chicken or pork, and/or serve as a sauce on the side of just about any meat or main dish.
