6.Apricot Butterscotch Sauce(Yield 1 1/2 cups):
Ingredients:
4 tablespoons butter; 1 cup brown sugar; 1 tablespoon corn syrup; 1/2 cup apricot jam; 1/2 cup heavy cream; 1/2 teaspoon vanilla extract; 1/8 teaspoon salt;
Method:
In a small saucepan, over medium heat, heat the butter, sugar, corn syrup, and jam, stirring, for 2 minutes. Remove from heat. Add the cream, vanilla extract, and salt. Cool slightly. Spoon over ice cream.

7.Remoulade Sauce:
Ingredients:
1 cup mayonnaise; 1/2 cup coarse ground mustard; 1/3 cup vegetable oil; 3 tablespoons finely chopped onion; 3 tablespoons finely chopped cellery; 1 tablespoon parsley; 1/4 teaspoon paprika;
Method:
In a blender mix the mayonnaise and mustard. Slowly pour in the Oil while blending at low speed. Add remaining sauce ingredients and blend at medium speed for 1 minute. Remove and refrigerate the sauce for at least 1 hour prior to serving.

8.Hot Fudge Sauce:
Ingredients:
1 1/2 cups granulated sugar; 1/2 cup brown sugar, packed; 3/4 cup cocoa; 1/4 cup all-purpose flour; 1/2 teaspoon salt; 1 can (14 ounces) evaporated milk; 1 cup water; 2 tablespoons butter; 2 teaspoons vanilla;
Method:
Combine sugar, cocoa, flour, and salt in saucepan. Add milk, water, and butter. Cook over medium heat, stirring constantly, until boiling. Cook 5 minutes longer. Remove hot fudge sauce from heat, cool, then stir in vanilla.

9.Caramelized-Onion Sauce(Yield 2 cups):
Ingredients:
1 tablespoon butter or stick margarine; 3 cups thinly sliced onion; 1 cup dry red wine; 3 cups fat-free, less-sodium chicken broth; 1/8 teaspoon salt; 1/8 teaspoon black pepper;
Method:
Melt butter in a large skillet over medium-high heat. Add onion; cook 5 minutes, stirring frequently. Continue cooking 15 minutes or until deep golden brown, stirring constantly. Add wine; cook 5 minutes or until liquid almost evaporates. Remove onion from pan; finely chop onion. Return onion to pan; stir in broth, salt, and pepper. Bring to a boil; cook until reduced to 2 cups (about 10 minutes). Serve with pork tenderloins, or shrimp bruschetta.

10.Old Fashioned Mustard Sauce:
Ingredients:
1/2 cup White vinegar; 1/2 cup Dry mustard; 1/4 cup Water; 3/4 cup Brown sugar; 2 Eggs beaten;
Method:
In saucepan mix vinegar and mustard. Stir in remaining ingredients and bring to a slow boil over low heat, stirring constantly. Cook and stir until thickened, about 10 minutes. Store in refrigerator.
