Chop avacados and place in large mixing bowl. Mash with a fork until smooth, or leave coarsely mashed for "chunky style" guacamole. Stir in lemon juice, tomatoes, onion, garlic, and salt & pepper to taste. You can substitute Hass avocado with the big, light green variety, but we've found that the smaller Hass is more flavorful. If you are preparing avacados ahead of time, make sure you sprinkle with lemon juice first to prevent them from turning an unappetizing brown color. Guacamole will also lose its bright color with time and doesn't store well, so it is best to use up a single batch at one sitting. 7.Smoked Salmon Bites(makes 24): Ingredients: 1/4 cup reduced-fat mayonnaise; 2 teaspoons wasabi paste or 2 teaspoons wasabi powder mixed with 1 tablespoon water; 24 mini rice crackers; 4-6 ounces smoked salmon, cut into 24 1-inch pieces; 24 small pieces pickled ginger; 1 teaspoon freshly grated lemon zest; Method: . Mix mayonnaise and wasabi paste (or reconstituted wasabi powder) in a small bowl. Top each cracker with 1 piece salmon, 1/2 teaspoon wasabi mayonnaise, 1 piece pickled ginger and a sprinkling of lemon zest. Wasabi paste, wasabi powder and pickled ginger can be found in the Asian-foods section of most supermarkets. You can prepare the wasabi mayonnaise, cover and refrigerate for up to 3 days. 8.Cherry Tomato Bruschetta(makes 14): Ingredients: 3 pints cherry tomatoes; 1 tablespoon extra-virgin olive oil; 3 cloves minced garlic; 1/2 teaspoon salt; 1/2 teaspoon freshly ground pepper; 1/4 cup sliced fresh basil; 1 tablespoon red-wine vinegar; 14 slices baguette (preferably whole-wheat), toasted; Anchovy fillets; Kalamata olives or sliced fresh basil for garnish; Method: Preheat oven to 325°F. Toss tomatoes with oil, garlic, salt and pepper. Place on a baking sheet and roast until broken down, 45 to 55 minutes. Combine the roasted tomatoes with basil and vinegar. Top baguette slices with the roasted tomato mixture. Garnish with anchovy fillets, Kalamata olives or sliced fresh basil. 9.Black-eyed Pea Dip: Ingredients: 1 can (16 ounces) black-eyed peas,drained; 3 green onions, chopped with tops; 1/2 cup sour cream; 1 tsp. garlic salt; 1/2 cup salsa; 4 slices bacon, cooked and crumbled; Method: Reserving 1/3 cup, place peas in a blender. Process until smooth. Blend in onions, sour cream and garlic salt. Transfer to a bowl and stir in reserved peas and bacon. Serve with tortilla chips, bagel chips or corn chips. 10.Spinach-Crab Fondue(makes 2 cups): Ingredients: 2 (10 ounce) packages frozen chopped spinach, thawed; 1 bunch green onions, thinly sliced; 1/4 pound butter; 8 ounces crabmeat; 1/4 cup grated Parmesan cheese; 1/4 teaspoon garlic powder; Dash of salt; Dash of pepper; Dash of Tabasco sauce; Method: Squeeze all liquid from chopped spinach.
