Serve on lettuce leaves. 7.Sauerkraut and Pork: Ingredients: 1 (4 lb.) pork loin roast; 2 bags sauerkraut; 4 medium apples, pared and chopped coarsely; 1/2 c. brown sugar; 2 Tbsp. caraway (optional); 1/8 tsp. black pepper (for pork); 1 lb. pkg. wide noodles; 1 large carton sour cream; Method: Roast pork with pepper at 325 degrees for 40 minutes for each pound of pork. Keep warm in covered pan. Mix sauerkraut, apples, onion, caraway seed and brown sugar. Bake in oven for 35 minutes for 325 degrees. Boil noodles until tender. Add to sauerkraut. Bake 10 minutes longer. Slice roast and place on plate. Stir carton of sour cream in sauerkraut and noodles then serve, making a ring of kraut and noodles around pork slices. 8.Garlic Mashed Potatoes: Ingredients: One pound of potatoes; one quarter to one half of garlic head [according to taste]; butter [two tablespoons or more]; one quarter cup whole milk; green onions; Method: Place the peeled garlic, along with the potatoes in boiling water. Bring to a boil and reduce the heat. Remove from the heat when the potatoes and garlic are tender. When the potatoes are ready, so will the garlic. Save the boiled water. In a separate pan, warm the butter and the milk. Add to the mashed potatoes. Top the mashed potatoes with finely chopped green onions. The saved boiled water is used for gravy and adds a touch of garlic flavor. 9.New Years Day Chowder(serves 4): Ingredients: 2 ounces chopped ham; 1 cup Red Onion -- Chopped; 4 cloves garlic -- minced; 1 1/2 teaspoon rosemary -- crushed; 32 ounces Nonfat Chicken Broth; 16 ounces can Black-Eyed Peas -- undrained; 2 1/2 cups red potatoes -- diced; 2 cups Greens (Collard, Turnip Or Mustard greens); 1/4 teaspoon black pepper; 1/4 cup fresh parsley --chopped; Method: Spray a 4 qt. Dutch oven with pam. Heat over Medium heat for 1 minute. Add ham, onion, garlic and rosemary. Cook until onion is tender, stirring often. Add broth, peas, potatoes, green and pepper. heat to boiling. Reduce heat to Low. Cover and cook for 30 minutes or until potatoes and greens are tender, stirring occasionally. Stir in parsley. 10.Asparagus Au Gratin(serves 4): Ingredients: 2 tbsp butter; 1tsp salt; 2tbsp flour; 2 cups milk; 1 cup freshly grated parmesan; 1 1/2 cups toasted bread crumbs; 1 cup cashews toasted; 2 cups asparagus heads; Method: In a saucepan over medium low heat, melt butter; stir in salt and flour. Cook for about 4 minutes, then add milk gradually, stirring. Add grated cheese and cook, stirring, until thickened. Remove from heat. Combine toasted bread crumbs with the cashews. Reserve a few tablespoons for topping. In a buttered casserole, place a layer of asparagus, a layer of toasted bread crumb mixture, then a layer of sauce.
