New Year Happy New Year Wishes(2008) From 101lifeStyle.com New Year Recipes: New Year Eve Recipes: B.New Year Eve Soups: 1.White Bean Soup with Cabbage and Salmon(makes 4 servings): Ingredients: 1 cup navy beans, picked over, rinsed, and soaked overnight; 2½ cups water; 2 cups chicken broth; 6 cloves garlic, minced; 1 bay leaf; 2 tablespoons extra-virgin olive oil; ½ head cabbage, coarsely chopped; 1 large onion, chopped; ½ pound skinned salmon fillet, cut into 1" chunks; 2 ounces (2 thick slices) Canadian bacon, coarsely chopped; 1 tablespoon chopped fresh thyme; Method: In a large saucepan or Dutch oven, combine the beans, water, broth, garlic, and bay leaf. Bring to a boil over high heat. Reduce the heat to low, cover, and simmer, stirring occasionally, for 50 minutes, or until the beans are very tender. Remove and discard the bay leaf. In a food processor or blender, puree the soup in batches until smooth. Return the soup to the pot and bring to a boil over medium heat. Cover to keep warm. Meanwhile, heat 1 tablespoon of the oil in a large nonstick skillet over high heat. Add the cabbage and onion. Cook, stirring frequently, for 6 minutes, or until lightly browned and tender. Add to the soup. In the same skillet, heat the remaining 1 tablespoon oil over medium heat. Add the salmon and bacon. Sprinkle with the thyme. Cook, stirring gently, for 3 minutes, or until the salmon is lightly browned and just opaque. Gently stir the salmon mixture into the soup. 2.New Year lucky Peas Soup: Ingredients: 1/3 c lentils, ½ cup white beans, ½ c red kidney beans, 1/3 c dried peas, 1tsp salt, 1 lb cut up ham or ham bone, 1 large onion sliced, 16 oz cannned tomatoes cut up with liquid, 1 mashed clove of garlic, 2 tbsp lemon juice, salt and pepper; Method: Wash and soak the beans overnight with 1 tsp salt. Drain and cover with 2 quarts of water. Add 1 lb cut up ham or ham bone. Boil slowly 2 1/2 to 3 hours. Add 1 large onion, cut in slices 1-16 oz can tomatoes, cut up and undrained 1 mashed clove of garlic 2 tbsp lemon juice salt and pepper to taste. Simmer several more hours until very thick. This is excellent with a hot, crusty french bread. 3.Tomato Barley Soup(makes 4 servings): Ingredients: 1 Tbsp. olive oil; 2 carrots, sliced; 2 onions, chopped; 1 Tbsp. minced garlic; 2-1/2 cups water; 1/2 cup uncooked quick barley; 2 (14 oz.) cans diced tomatoes, undrained; 14 oz. can low sodium vegetable broth; 1/4 tsp. pepper; 1/4 tsp. dried thyme leaves; Method: In heavy saucepan, heat olive oil; add carrots, onions, and garlic. Cook and stir over medium heat until vegetables are crisp tender, about 6 minutes. Meanwhile, in another heavy saucepan combine all remaining ingredients and bring to a boil over medium heat. Add sauteed carrot mixture and bring to a boil again. Reduce heat to low, cover, and simmer until barley is tender, about 15 minutes. 4.Lentil Soup with Apricots: Ingredients: Part I: 1 cup chopped onion; 1/2 cup sliced carrots; 1/2 cup sliced celery; 3 cup peeled, cubed eggplant; 1 cup diced green pepper; 6 clv garlic, minced; Part II: 6 cup chicken stock; 1 1/2 cup lentils; 1 1/2 cup chopped tomato; 4 oz dried apricots; 1/4 tsp cinnamon; 1/4 tsp allspice; 1/4 tsp cayenne; 1 tbl paprika; 1 1/2 tsp salt; Garnish: 3 tbl parsley; 1 tbl mint; Method: Saute Part I in olive oil until lightly browned. Add Part II. Simmer until lentils are tender. Adjust seasonings to your taste and Garnish. 5.Italian Tuna Chowder(serves 2): Ingredients: 1 potato, peeled and diced; 1 onion peeled and diced; 1 branch celery, diced;2 cups stock {or 1 cup water plus 1 cup milk}; 1 can tuna, drained; 1/4 cup hot heavy cream; Method: Simmmer the vegetables in the stock or water and milk until half cooked, about 10 minutes. Add the tuna and simmer until the vegetables are cooked but still firm. Serve with 2 tablespoons of the hot cream in each bowl. Tip: You can add one small carrot, peeled and diced to the list of ingredients, not so much for the flavor as for the color. Garnish with some fresh chopped parsley. A pinch of red pepper flakes near the end of cooking adds a nice zip. It's a good idea to use the olive oil that is drained from the canned fish to saute the vegetables before adding them to the broth.  More New Year Eve Soup Recipes |
