New Year Kid's Recipes(Contd.):

6.Mini Pizza(2 servings):
Ingredients:
2 English Muffins; 1/2 cup spaghetti sauce; 1 oz. mozzarella cheese; oregano;
Method:
Half and toast muffins, shred cheese. Place muffins on plate, spread with spaghetti sauce, top with cheese and season with oregano. Cook at Medium 1 - 2 minutes, or until cheese melts.

7.English muffin cheese and bacon sandwich:
Ingredients:
4 English Muffins; 16 pieces of bacon; 8 slices of your favorite cheese; 4 slices of tomato; 3 tsp English Mustard powder; 3 cloves of garlic chopped up; 3 tsp of olive oil; 2 tsp of soy sauce; 1 tsp pepper;
Method:
Fry the bacon and while it is frying saute the chopped garlic, pepper, salt, soy sauce and olive oil. Once the bacon is done to your taste, toast the English muffins putting a slice of tomato on each one and top that with some bacon and two slices of cheese. One slice of cheese on top and one on the bottom to help hold the sandwich together. Now put the sandwiches in the broiler to melt the cheese. You may also use the microwave to melt the cheese. Serve these sandwiches with a cold beverage and some chips.

8.New Year Hoppin John(serves 6-8):
Ingredients:
1 pound of dried black-eye peas, 5 cups of water; 1 cup of uncooked rice; 1 pound of low-fat smoked sausage or kielbasa; 1 medium-size onion, chopped; 1/2 cup of chopped celery; 1 medium garlic clove, minced; 1 medium green bell pepper, seeded, chopped; 2 10-ounce cans of chunky tomatoes and green chiles; a teaspoon of salt; a teaspoon of ground black pepper;
Method:
Put the peas in a large bowl and soak them in water overnight. Then pour the peas into a strainer and rinse them with cold running water. Pick out and throw away any shriveled, broken, and icky-looking peas. In a large saucepan, cover peas with 5 cups of fresh water and heat them until the water boils. Then lower the heat and allow the peas to simmer until they're tender yet firm. This should take about 40 minutes. In the meantime, cook 1 cup of rice (follow the instructions on the package). Slice the sausage into 1/2" pieces and brown them in a large non-stick skillet over low heat. Add the chopped onion, celery, garlic, and bell pepper. Then sautee the ingredients for about five minutes or until they're slightly cooked. Add the sauteed onion/garlic/pepper/sausage mixture into the pot with the peas, along with the salt, black pepper, and cans of chunky tomatoes and chiles. Cover the pot tightly and cook over low heat for about 20 minutes more or until the peas are tender. Serve the peas and sausage over the rice.

9.Sweet Potato And Parmesan Cheese Souffle(serves 4):
Ingredients:
2 big sweet potatoes, sliced widthwise into 1/2 inch pieces; 5 large cloves elephant garlic, skins on; 1 tsp. salt; 1 tsp. black pepper; 2 tbsp. whipping cream; 1 oz. Parmesan cheese, crumbled; 4 large egg yolks, beaten; 4 large egg whites, beaten until stiff; 1/2 oz. margarine, melted; 1 tbsp. all-purpose flour, sifted; 1/2 cup whole milk;
Method:
Preheat oven to 350 F (180 C). Put sweet potatoes on a cookie sheet and bake for 45 minutes until cooked. Add garlic cloves about 10 minutes before cooking time is complete. Meanwhile, add all-purpose flour to the margarine until a thick paste has been formed. Slowly add the milk and cream until the paste becomes thinner and thinner, but not lumpy. A runny sauce should be formed. Season with salt and black pepper and slowly heat until thickened, stirring continuously. Set aside until needed. Using a food processor, combine sweet potatoes and garlic. Add salt, black pepper, half of the Parmesan cheese and egg yolks. Beat until smooth. Fold in the egg whites until smooth. Pour sweet potato mixture into a greased soufflé dish. Crumble over remaining Parmesan cheese. Bake for 20 minutes until golden on top. Serve hot with a selection of choice vegetables for a family reunion or party with friends.

10.Easy Cinnamon Apples:
Ingredients:
2-3 pounds of sliced and peeled apples; 1 9-ounce bag of red hots or similar cinnamon candies;
Method:
Place apples in crock pot and cover with red hots. Cook on low temperature for 4-6 hours. Stir and spoon the cinnamon sauce over the apples occasionally. For softer apples cook longer. Serves 4-6 people. These apples can be served hot or cold and can be kept in the refrigerator for a few days after preparation.
