6.Artichoke Bruschetta(serves 8):
Ingredients:
1 (6.5 ounce) jar marinated artichoke hearts, drained and chopped; 1/2 cup grated Romano cheese; 1/3 cup finely chopped red onion; 5 tablespoons mayonnaise; 1 French baguette, cut into 1/3 inch thick slices;
Method:
Preheat the broiler. In a medium bowl, mix marinated artichoke hearts, Romano cheese, red onion and mayonnaise. Top French baguette slices with equal amounts of the artichoke heart mixture. Arrange slices in a single layer on a large baking sheet. Broil in the preheated oven 2 minutes, or until toppings are bubbly and lightly browned.

7.Braised Broccoli With Olives:
Ingredients:
4 small heads broccoli or 1 1/2 or more pounds broccoli sprouts; sea salt and freshly ground pepper; 1/4 cup olive oil; 1 onion; 1 tablespoon chopped marjoram or oregano; 3 garlic cloves, coarsely chopped; 2 tablespoons olive paste or finely chopped Gaeta olives; grated zest of 1/2 lemon;
Method:
Separate the stalks from the broccoli crowns. Thickly peel and trim the stalks and chop them into 1/2-inch pieces. Peel the base of the broccoli crowns, then separate them into florets. Bring 2 quarts water to a boil; add salt, then the broccoli. Cook for 5 minutes (even if the water barely returns to the boil), then scoop into a colander to drain, reserving a cup of the water. Chop into small pieces just smaller than bite-sized. Warm the olive oil in a wide skillet, then add the onion, marjoram, and garlic. Cook over medium-low heat, stirring now and then, until the onion is softened, 5 to 7 minutes. Stir in the olive paste; add the broccoli and stir to coat well. Taste for salt, season with pepper, and add the lemon zest. Add the reserved broccoli water and simmer gently until the broccoli is very tender, 15 to 20 minutes.

8.Roast Beef & Swiss Sandwich Bake Recipe:
Ingredients:
2 C. Bisquick; 1 C. milk; 2 T. dry mustard; 1 egg; 1 pkg. thinly sliced roast beef chopped; 1 C. shredded Swiss cheese; ground pepper;
Method:
Heat oven to 350. Grease square baking dish. Stir in Bisquick, milk, mustard and egg until blended. Pour half of the batter into the baking dish. Top with half of the roast beef and ½ C. of the cheese. Top with remaining roast beef.. Pour remaining batter over roast beef. Bake uncovered 45-50 minutes or until golden brown and center is set. Sprinkle with remaining ½ C. cheese and pepper. Let stand 5 minutes before serving. Serve with green beans.

9.Pomegranate-Glazed Baked Squash and Apples:
Ingredients:
Juice from 2 large Pomegranates; 2 1/2 lbs. butternut squash; 4 apples (McIntosh, Jonagold, Granny Smith, Gala or Braeburn); 1/2 cup light brown sugar; 2 tablespoons melted butter; 1 teaspoon salt or to taste;
Garnish
1/4 cup arils from 1 large Pomegranate;
Method:
Prepare garnish – Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/4 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use). Prepare fresh pomegranate juice. Preheat oven to 350°F. Peel butternut squash and cut into 2-inch chunks. Arrange in a buttered 13 x 9 x 2-inch baking dish. Cut apples into quarters or slices (peeled or skin on); add to baking dish. Mix together light brown sugar and pomegranate juice. Spread on squash and apples. Drizzle with butter. Bake 20 to 30 minutes until soft. Garnish with arils.

10.Zucchini Corn Fritters:
Ingredients:
2 eggs, beaten; 1 cup milk; 1/4 cup butter, melted; 2 cups flour; 1 tablespoon baking powder; 1/4 cup sugar; 1/2 teaspoon salt; fresh ground pepper; 2 cups grated zucchini; 1 1/2 cups frozen corn; 1 cup shredded cheddar cheese;
Method:
Whisk together eggs, milk, and butter. Stir in flour, baking powder, sugar, salt and pepper. Mix in zucchini, corn, and cheese . Drop by generous tablespoons into pan coated with olive oil at medium high heat. Remove to warm plate.
