Menu 2:
1.Hot Appetizing Meatballs (6 Servings):

Ingredients:
1 lb ground pork; 1/2 lb ground beef; 1/2 lb Italian sausage, casing removed; 2 eggs; 1/2 cup romano/Italian bread crumbs; 2/3 cup shredded Italian mix cheese; 1/3 cup chopped onions; 3-4 cloves garlic, minced; 1 14.5 oz can diced Italian tomatos; 1/3 cup extra virgin olive oil; 1 Tbsp Italian seasoning;
Method:
In large mixing bowl, mix all the meat, eggs, bread crumbs and shredded cheese together and set aside. In a small skillet, add 1 tbsp olive oil, brown onion and garlic for 5 minutes. Add 1/2 the can of tomatos and simmer for 5 minutes. Let cool to room temperature. Preheat oven to 350 degrees. Combine vegetable mix with meat mixture. Wipe a baking sheet with 1 tsp oil. Form meatballs in palm of hand, about 1/2 cup. Once all the meat balls are ready, drizzle with remaining olive oil and bake for 30 minutes.
Notes: Serve with spaghetti, add tomato sauce or white sauce. Also makes killer meatball hoagies.

2.Fresh Pasta With Tomatoes And Calamari(yield: 1 pound pasta; 4 main dish serving):
Ingredients:
3 cups Durum semolina; 1 teaspoon Salt; 2-3 Eggs; 1 tsp Squid ink; 1 tablespoon Olive oil; 2 cups Heavy cream; 1/2 cup Grated Parmesan cheese; 1/2 cup Grated Romano cheese; Salt -- to taste;Freshly ground black pepper to taste; 4 Italian Roma tomatoes, split, roasted and julienned; 1/4 cup Chopped green onions; 1 pound Fried calamari;
Method:
Mix the semolina and salt together. On a large work surface, form a mound with the semolina and create a “well” in the center of the mound. In a small bowl, beat the eggs, squid ink and oil together until smooth. Pour this mixture into the well. Working from the inside of the well out, gradually work the semolina into the eggs, until all the flour is worked in. Wrap with plastic and allow to rest in the refrigerator for 30 to 40 minutes. Remove from the refrigerator and temper for 5 minutes. Flour a surface and turn the dough out onto it. Roll out the dough to 1/2 of an inch thick. Cut the dough out into thirds. Using a pasta machine, wide cutters, carefully work one piece of the pasta dough through the pasta machine. Lightly toss the cut pasta in flour to prevent from sticking. Pass the remaining pieces of pasta through the machine. Bring a pot of salt water to a boil. In a hot saute pan, add the cream. Over high heat, reduce the cream by half, about 5 minutes. Stir in the grated cheeses and season with salt and pepper. Continue to simmer the sauce until it coats the back of a spoon, about 2 to 3 minutes. Remove from the heat and set aside. Drop the pasta in the boiling water and cook for 3 minutes, or until the pasta is tender. Drain the pasta and turn into the cream sauce. Turn the pasta/cream mixture into a mixing bowl. Add the tomatoes, green onions, and fried calamari. Toss to incorporate all the ingredients. To assemble, divide the pasta between four bowls. Garnish with chopped parsley and grated cheese.

3.Italian Cheesecake:
Ingredients:
1 pound cream cheese; 3 tablespoon cornstarch; 1/2 lbs butter, melted; 1 pound ricotta cheese; 1 1/2 cups sugar; 4 eggs, beaten lightly; 3 tablespoon flour; 2 tablespoon lemon juice; 1 16 oz container sour cream; 1 vanilla;
Method:
Beat cream cheese until fluffy. If ricotta is coarse-textured, press it through a fine sieve twice. Mix ricotta with cream cheese. Beat in sugar gradually. Add beaten eggs, lemon juice, and vanilla. Stir together the flour and cornstarch. Gradually beat into cheese mixture. Add melted butter and sour cream. Pour into greased 10" springform pan. Bake at 320-350 degree for 1 hour or until set in center. Turn oven off and let cool in oven for 2 hours. Remove from oven and cool until room temperature. Chill thoroughly before removing sides and serving.
