Valentine's Day Happy Valentine's Day(2008) From 101lifeStyle.com Valentine's Day Recipes: Valentine's Day Romantic Dinner Menu Ideas: Menu 1: 1.Delicious Snappers(serves 2): Ingredients: 2 ounce Red Snapper fillets; 1/4 cup Hellman¹s mayonnaise; 1/4 cup softened butter; 1/2 cup Parmesan cheese; 3 tablespoons green onion, chopped; 3 dashes Tabasco; Method: Place the fish in a lightly buttered baking dish with skin side down. Bake at 425 for 12 to 15 minutes per inch of thickness. Mix all of the remaining ingredients together. When done (check center of fish) spread mixture over top of fish. Broils until top is brown and bubbly. 2.Shrimp, Chicken & Artichoke Casserole(serves 2): Ingredients: 8 ounces cooked chicken breast, diced; 1/2 pound baby shrimp, cooked and cleaned; 8 artichoke hearts, drained and cut in half; 10 mushrooms, sliced; 1/2 tablespoon salted butter; 1 teaspoon Worcestershire sauce; 3/4 cup Béchamel Sauce(recipe below); 2 tablespoons sherry; 1 tablespoon Parmesan cheese; 1/4 teaspoon paprika; 1 pinch of salt and white pepper to taste; 1 cup seasoned rice; Method: Arrange artichoke hearts in bottom of small, shallow, buttered casserole dish. Add shrimp and chicken. Sauté mushrooms in butter and add to Béchamel sauce. Add Worcestershire, sherry, salt, and white pepper to white sauce. Stir gently and pour over casserole. Sprinkle with Parmesan cheese and paprika. Bake uncovered at 350°F for about 25 to 30 minutes or until bubbly. Top should be brown. Garnish with parsley. Serve with your favorite rice. 3.Bechamel Sauce(makes 2 cups): Ingredients: 1/4 cup unsalted butter; 1/4 cup all-purpose flour; 2 cups milk; 1 small onion studded with 2 Or 3 cloves, optional; 1 small bay leaf; dash dried leaf thyme, crumbled; salt and white pepper to taste; nutmeg, to taste; Method: In a medium heavy saucepan, melt butter over low heat. When butter starts to foam, add the flour all at once, mixing well with a wooden spoon. Cook over low heat 3 to 4 minutes, stirring constantly to incorporate and cook flour. Remove pan from heat and let stand, up to 15 minutes. Meanwhile, in a medium saucepan, scald milk (heating it until just below boiling point). Return saucepan with roux to medium-low heat. Add all of the scalded milk at once (to avoid the formation of lumps). Simmer, stirring gently with a wire whisk or wooden spoon. Add studded onion, bay leaf and thyme sprig. Cook, stirring, over low heat, 15 to 20 minutes, until smooth and thickened. Strain sauce through fine-mesh strainer. Add salt, white pepper and nutmeg to taste. 4.Sexy Strawberry Surprise: Ingredients: 1/2 lb. (275g) strawberries; 2.5 fl. oz. (75ml) double cream; 1.5 fl. oz. (45ml) brandy; quarter teaspoon of vanilla essence; Method: Hull the strawberries and place in a bowl. Pour over the brandy and put in the refrigerator for an hour. Divide the strawberries between 4 individual serving glasses. Whip the double cream with added vanilla essence until stiff and spoon over the strawberries.
