Easter Main Dish Recipes:

1. Lamb Wraps:
Materials Required: 500 gm minced lamb; 1/2 cup dried breadcrumbs; 2 tsp Moroccan spice mix; 2 garlic cloves, crushed; 1 egg, beaten; Salt and cracked black pepper; Oil spray, to grease; 2 tomatoes, diced; 1/4 iceberg lettuce, shredded; 4 flat breads, about 23 cm across; 1/4 cup fresh mint leaves; 4 tbsp store bought hummus;
1. Place mince, breadcrumbs, spice mix, garlic, egg and salt and pepper in bowl. Mix well to combine; using clean hands is the easiest way to do it. Divide mixture into 12 and shape into 7 cm sausage shaped patties.
2. Heat frying pan over medium heat for 3 minutes, until hot. Spray with oil and cook for 10 minutes, turning frequently. Divide tomatoes and lettuce between flat breads and top with the patties, mint and hummus. Wrap and serve.

2. Lamb Shanks:
imageMaterials Required: 6 pieces lamb shanks, 1 pound; 1/4 cup all-purpose flour for coating; 1 cup water; 1 onion, finely chopped; Salt and pepper to taste; 1 cup evaporated milk; 1 (10.75 ounce) can condensed tomato soup;
1. Over medium high heat, heat a large deep skillet. Spray it with cooking spray. Put a light coat of flour on the lamb shanks, and brown it on all sides in the pan. Now drain out the fat content.
2. Now add to it water, onion, salt and pepper. Cook it under low fire, covered and cook until the lamb gets tender, for about 1 1/2 hours. Turn the shanks over while cooking, and add water gradually if required while cooking. When the shanks are ready stir in the milk which has evaporated, and tomato soup. Cover it again and cook for another 10 minutes. Serve with sliced cooked carrots, celery stalks and oregano.

3. Baked Chicken:
Materials Required: 1 whole chicken, cut into pieces, 3 pound; 1 teaspoon salt; 1 teaspoon ground black pepper; 1 teaspoon ground cinnamon; 2 tablespoons molasses; 2 tablespoons cider vinegar; 2 tablespoons mustard;
1. Preheat oven to 400 degrees F. Take a large baking dish and grease it.
2. Then put seasoning to the chicken with salt, pepper, and cinnamon. Keep it in the prepared baking dish.
3. Mix the molasses, vinegar and mustard in a bowl.
4. Keep the chicken in the oven for baking for 20 minutes which has already been preheated. Coat the chicken with the molasses mixture. Again continue with the baking for another 20 minutes until the juices of the chicken is clear.
