Easter Dessert Recipes: 7. Chocolate Cookies: Materials Required: 1 cup flour; 3/4 cup butter; 50 ml condensed milk; 75 gm caster sugar; 100 gm chocolate (broken into tiny pieces); 1. Cream together butter and castor sugar till light and fluffy. 2. Add condensed milk and mix it. Add flour and chocolate pieces and form together into soft dough. 3. Meanwhile, preheat the microwave at convection mode to 180 degree centigrade. 4. Roll the dough into 2.5 cm. Cut into fancy shapes with a biscuit cutter and place on a baking tray and bake at 180 degree centigrade for 10-15 minutes. 5. Allow the cookies to cool and dust icing sugar or cocoa powder on top. 6. Serve with tea/coffee/juice. 8. Cherry And Almond Cake:
Materials Required: 200 gm flour; 200 gm soft butter and extra for greasing; 4 eggs, beaten; 1 tsp baking powder; 180 gm caster sugar; 2 tbsp orange juice; 1/2 tsp almond essence; 1 cup glace cherries, halved; For decoration: 100 gm icing sugar, sifted; 3 tbsp flaked almonds; 10-12 fresh cherries; 1. Preheat the oven to 180 degrees at convection. Grease a cake dish with butter and keep aside. Beat the butter and sugar together until fluffy and light. 2. Stir flour and baking powder together and beat the eggs. Now add beaten egg and flour to the sugar butter mixture, also adding the orange juice. 3. Mix evenly till thick and creamy. Toss the cherries in the extra 1 tbsp flour and fold into the batter. Add almond essence. 4. Spoon into the prepared cake dish and bake at 180 degrees for 40 minutes. When ready, leave to cool for 10 minutes, and then remove on to a cooling rack. For decoration: Mix icing sugar with one tbsp of water. Spread the flaked almonds and decorate with the fresh cherries over the top of the cake. Sprinkle the icing sugar over the cake to decorate. 9. Passion Fruit Drizzle Cake: Materials Required: Oil spray; 175 gm unsalted butter, softened; 2/3 cup castor sugar; Grated zest of 2 lemons; 3 eggs, beaten lightly; 1 1/2 cups self raising flour; 1/2 cup almond meal; 1 cup Greek style yoghurt; Passion fruit syrup; 1/2 cup castor sugar; Juice of 1 lemon; 1/2 cup passion fruit pulp; 1. Preheat oven to 180 degrees. Grease tin with oil spray. Using electric beaters, beat butter, sugar and lemon zest together in bowl until light and fluffy and then beat in egg a little at a time until incorporated. Fold in remaining ingredients and spoon into prepared tin. 2. Level cake mixture with spatula and bake cake for 35 to 40 minutes until risen, or until a skewer or toothpick inserted in centre comes out clean. Cool in tin for 5 minutes, and then turn out onto wire rack to cool. 3. Passion fruit syrup: place sugar, lemon juice and water in saucepan and heat gently to dissolve sugar. Add passion fruit pulp and bring to boil, and then simmer gently for 5 minutes until thickened. Using skewer, spike cake with about 20 holes and drizzle syrup over top. Slice and serve with yoghurt. 10. Chocolate Easter Egg Recipe: Materials Required: 1 c Butter, softened; 3 lb icing sugar; 2/3 c Condensed milk; 1 tb Vanilla; 1/2 tsp Salt; 1 lb semisweet chocolate, chopped; 2 tb Vegetable shortening; For icing: Icing sugar; 1 c Vegetable shortening; 1/2 c Milk; Food coloring; 1. Divide the dough into four portions to have variety, use extra flavors. 2. Beat butter in a large bowl, until it gets fluffy. Gradually put in icing sugar, milk, vanilla and add salt. Knead the dough on a work surface until it gets smooth. Shape and make 32 eggs. Keep it refrigerated for an hour until it gets firm. 3. For the icing, in a bowl, beat sugar till it gets fluffy. 5. Beat in milk until smooth. Make it into batches, then mix food coloring. Now the eggs are ready to decorate.
