Easter Side Dish Recipes:

1. Baked Jacket Potatoes:
Materials Required: 200 gm potatoes; 2 tbsp oil;
Vegetarian topping: 1/2 tsp oil; 1 green chili, chopped; 2 tbsp hung curds; 1/2 tsp chili powder; 1/2 tsp roasted cumin powder; Salt, pepper to taste;
Non vegetarian topping: Sweet chilly prawn / tuna / chicken topping; 1 tsp olive oil; 100 gm prawns, cleaned; 1 onion, chopped; 1 tsp ginger, chopped; 1 tbsp tomato sauce; 3 tbsp sweet chilly sauce; Salt, pepper to taste;
1. Prick the skin of the potatoes all over with a fork and microwave for 5 minutes at 100% power, then bake/grill at 250 degree convection for 10 minutes for browning.
2. For vegetarian topping, mix all the ingredients together, except tomato sauce in a microwave safe bowl and microwave at 100% power.
3. For non vegetarian topping, similarly mix all the ingredients except tomato sauce in a microwave safe bowl and microwave at 100% for 3-4 minutes.
4. When cool, cut each potato lengthwise across the centre. Top each jacket potato with baked bean topping or non vegetarian topping, topped with hung curd and tomato sauce. Garnish with chopped green coriander before serving.

2. Carrot Casserole:
imageMaterials Required: 2 1/2 cups sliced carrots; 1 tablespoon butter; 3 eggs; 1 cup white sugar; 1/3 cup milk; 1/2 teaspoon salt; 1 teaspoon ground cinnamon; 1 teaspoon ground nutmeg; 1 teaspoon vanilla extract;
1. Heat the oven to 325 degrees F. Take a 1 quart casserole dish and grease it.
2. Put carrots in a saucepan with sufficient water and bring it to a boil, keep it on the fire till the carrots get tender. Then drain out the water. Put the carrots in a blender, and blend till it becomes a smooth paste.
3. Mix the carrot paste butter in a medium size bowl. Put in the eggs, sugar, salt, cinnamon, milk, vanilla and nutmeg. Mix it and spread into the casserole dish which is prepared.
4. Bake for 25 to 30 minutes in the preheated oven till it gets fully set. Now your casserole is ready to serve and eat.

3. Cheese Straws:
Materials Required: 100 gm plain flour; 50 gm cold butter, cut into pieces; 50 gm cheddar cheese, finely grated; 1 egg yolk, beaten; A pinch of cayenne; Salt to taste;
1. Sift the flour. Add seasoning and butter. Rub it with your fingertips until it resembles fine breadcrumbs. Then mix in grated cheese and egg yolk. Preheat the oven to 200 degree centigrade.
2. Mix together to make stiff dough, using cold water if required. Keep this dough in a refrigerator for at least 30 minutes, then roll out the dough thinly and cut into strips of about 5 inches long and 1/4 inch wide.
3. Place on a baking tray and bake for 10-15 minutes in a preheated oven until golden brown. Remove from oven and cool on a wire rack. When completely cool, store in an air tight container.
