Easter Salad Recipes:

1. Red Skin Potato Salad:
Materials Required: 2 pounds clean, new red potatoes; 6 eggs; 1 pound bacon; 1 onion, chopped finely; 1 stalk celery, chopped finely; 2 cups mayonnaise; Salt and pepper to taste;
1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.
2.Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
3.Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
4.Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving.

2. Strawberry And Spinach Salad:
imageMaterials Required: 2 bunches spinach, washed and cut into small sizes; 4 cups sliced strawberries; 1/2 cup vegetable oil; 1/4 cup white wine vinegar; 1/2 cup white sugar; 1/4 teaspoon paprika; 2 tablespoons sesame seeds; 1 tablespoon poppy seeds;
1. Take a large bowl, put in the spinach and strawberries.
2. Now take a medium size bowl, put in it oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Take the spinach and strawberries and toss it about.

3. Easter Grass Slaw:
Materials Required: 6 cups coleslaw mix; 2 large carrots, shredded; 1 medium sweet yellow pepper, chopped; 1 large apple, chopped; 3 green onions, sliced; 1/2 cup chopped celery; 1 cup mayonnaise; 1/2 cup sugar; 2 tablespoons cider vinegar; 1 teaspoon salt; 1/4 teaspoon pepper;
1. Take a large bowl, and then mix the carrots, apple, onions, celery, coleslaw and yellow pepper. In a small bowl, mix the mayonnaise, sugar, vinegar, salt and pepper. Pour over the cabbage mixture and toss it about. Cover it and keep it refrigerated until it is ready to serve.
