Easter Salad Recipes:

4. Egg Salad:
Materials Required: 8 eggs; 1 tablespoon mayonnaise; 2 tablespoons prepared Dijon-style mustard; 1 teaspoon dried dill weed; 1 teaspoon paprika; 1/2 red onion, minced; Salt and pepper to taste;
1. Take a saucepan filled with cold water and place eggs in it, keep it to boil. Now remove it from the heat, cover and let the eggs remain in the hot water for 10 minutes. Now remove the eggs from the hot water, cool it, then peel and chop.
2. Take a large bowl; mix the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork.
3. Now you can serve this on bread as a sandwich or spread it over lettuce and make a salad.

5. Fresh Spring Salad:
imageMaterials Required: 1 lemon, juiced; 1 tablespoon mustard; 2 shallots, finely chopped; 2 1/2 tablespoons white wine vinegar; 1 tablespoon chopped parsley; 1/3 cup olive oil; 1/3 cup sour cream; Salt to taste; 1 teaspoon ground black pepper; 5 cups spring lettuce mix; 2 tomatoes, diced; 1 avocado; 1 tablespoon pine nuts; 4 English daisy blossoms;
1. Take a container of a blender and put in it lemon juice, mustard, shallots, vinegar and parsley. Blend it till the shallots are not visible. Then slowly pour in the oil while you continue to blend. Then put in sour cream, and season with salt and pepper.
2. Cut the avocado into 4 pieces and remove the insides. Cut each quarter into 3 slices. Keep each piece of the avocado in a fan shape towards the side of each salad plate.
3. Take a large bowl, put in the lettuce and tomatoes. Then pour in the dressing over the lettuce and tomatoes and toss it.
4. Make portions of the salad and put it in each plate so that you can see the ends of the avocado. Over each plate, sprinkle with pine nuts, and garnish with a daisy bud.
