Easter Soup Recipes:

1. Spinach And Blue Cheese Soup:
Materials Required: 6 tablespoons margarine; 2 cups chopped onion; 1 cup flour; Salt to taste; Ground cayenne pepper to taste; 1 pound bacon; 12 cups chicken broth; 4 cups milk; 8 ounces blue cheese; 2 packages frozen chopped spinach; 1 cup heavy cream;
1. Mix butter and margarine and onions in a large pot and keep it over medium heat, and sauté it for few minutes. When you add flour, stir it well and mix till it is well blended. Then add broth and raise the heat and bring it to a boil. Keep mixing the flour to keep it from becoming lumpy.
2. Then add milk, and lower the heat and then simmer it for 5 minutes. Add the blue cheese and stir until blended, then add the spinach and cook 3 more minutes. Put in cream, boil it and then put the heat off and let it simmer and stir well, then add salt and cayenne and pepper according to taste.
3. Let it cool, and then put it in a blender, adding little at a time. Then serve it into individual bowls and sprinkle it with bacon.

2. Sorrel Soup:
imageMaterials Required: Salt and pepper to taste; 3 cups vegetable broth; 2 tablespoons uncooked white rice; 1 bunch sorrel, stemmed and rinsed; 1/2 cup heavy cream;
1. Over medium heat, boil vegetable broth in a large saucepan. Put in the rice and then bring it to a boil for about 10 minutes. Put in the sorrel and let it boil. Remove from heat and blend it in batches in a blender.
2. Put it on the fire over medium low heat, then stir in the cream and add salt and pepper to taste. Heat it nicely and its ready to serve.

3. Ham Potato And Cheese Soup:
Materials Required: 12 potatoes, peeled and cubed; 2 large onions, finely chopped; 2 pounds processed cheese food; 1 pound chopped ham; Black pepper to taste; 3 1/2 tablespoons flour; 1 cup milk;
1. In a large pot, put potatoes, onion, and cubed ham. Cover with water. Cook until potatoes are soft.
2. Take out one cup of cooked potatoes and mash it in a separate bowl with the help of a fork. Add some broth from the pan, little at a time, along with the flour till it becomes a thick paste. Then add it to the pot.
3. Put the cheese, you can cut it or put whole pieces, in the pot. Let the soup simmer until the cheese melts and is thick. Then add pepper to taste and put in the milk.
